Apricot Purée
If you're using dried apricots, put the apricots in a saucepan and add the water. Let them soak for 1 hour (you don't have to go through this step when using fresh apricots).
¼ pound apricots, ½ cup water
Add the sugar and bring to a boil on low heat, while stirring.
¾ cup sugar
Let it boil for 2 minutes.
Put everything in a blender (or use an immersion blender) and turn it on until you've got a smooth purée.
Let it cool down to room temperature.
Orange Caipirinha Cocktail
Put 2 tablespoons of apricot purée in a cocktail glass.
2 tablespoons apricot purée
Slice the lime halve into 3 parts.
½ limes
Put ice cubes and lime parts into a cocktail shaker.

Add the Cachaça to the shaker.
3 tablespoons cachaça
Put a sieve and a lid on the shaker and shake for 1 minute.
Pour the Caipirinha through the sieve into the glass.
Garnish with ice cubes (optional) and some lime and fresh apricots.
NOTES
1. - ApricotsFresh or dried apricots, both are possible. With the dried variant, you let the apricots soak in water so that they absorb it. With the fresh version, make sure to remove the pit.By boiling the apricots with some sugar you get a sweet apricot purée that is very soft and easy to drink. If you put the apricots in the blender without cooking, you'll get some hard pieces in between.2. - CachaçaA real Caipirinha uses Cachaça as a liqueur . That is a sugarcane-based liqueur, with a hint of wood tones. If you don't have that at home, you can also replace it with vodka or rum.3. - Shake tip
Keep your hand on the cap while shaking. You don't want the contents of the shaker flying around the house.
Pour the Caipirinha through a sieve into the glass. You don't want to dilute it further with ice, just cool it
4. - StorageYou drink a caipirinha as quickly as possible after preparing it. It is possible to make and store the apricot purée in advance:
Refrigerator - Make the apricot purée and store it in an airtight container in the refrigerator for up to 3 days.
Freezer - Spoon the cooled apricot purée into a freezer box and freeze. This way it keeps good for up to 2 months. Let the fruit thaw in the refrigerator.
