Line a baking tray with parchment paper.
Heat sugar with water in a pan over low heat, stirring until dissolved.

Increase heat and cook until the syrup turns an amber caramel.
Pour the caramel onto the prepared tray and let it cool completely, then break it into small pieces.
Peel the oranges thickly, removing all white pith, and slice them. Place the slices in a bowl.

Mix honey with lemon juice and pour over the oranges. Stir gently and let marinate for at least 1 hour.
