A delicious recipe for salmon with orange in a bag. The salmon is flavored with pesto and stays juicy by the orange juices that are released by the heat of the oven. By adding all the ingredients and form it into an airtight package of aluminum foil the salmon sizzles in its own juices. So besides it got a lot of flavor you also serve a skinny dish.

A conventional oven is used. When using a convection oven (with air fan) decrease the temperature with 30 °F / 20 °C
Ingredients
600gramssalmon fillets
2oranges
4teaspoons pesto
4teaspoons capers
2teaspoons butter
1tablespoonolive oil
¼teaspoonsalt
⅛teaspoonground black pepper

Instructions
Preheat the oven to 390 degrees Fahrenheit / 200 degrees Celsius.
Tear off a piece of aluminum foil of approximately 8 x 8 inches (20 x 20 cm).
Grease the aluminum foil with some oil.
Place the salmon fillet on the oily surface.
Cut the oranges into thin slices.
Spoon 1 teaspoon pesto on the fillet and spread the pesto over the surface.
Place 2 or 3 slices of orange on the pesto (amount depending on the size of the salmon).
Spread 1 teaspoon capers on the oranges.
Top it off with 2 teaspoons butter.
Fold the foil close to a package where no steam comes free.
Place the packets in the middle of the oven and leave it for 15 minutes until the fish is done.
(note: make the packets very carefully open steam can escape and that is very hot.).
NOTES
Because you will cook the salmon in a package it needs very little fat. The little bit of butter gives it a creamy taste.
The salmon is cooked in a bag so all the juices stay inside and the fish becomes moist and tender.
