NOTES
1. Can I make this on a BBQ instead of a grill pan? Yes, it tastes even better on an outdoor grill - smoky and flavorful!2. Can I skip the sake or sherry? Sure, just add a splash of rice vinegar.3. How do I know when it’s medium? Press gently: it should feel springy but not firm. Or use a thermometer - about 135 °F (57 °C).4. Variations
Sweet & spicy: Add chili flakes or a bit of sriracha to the marinade.
Garlic lovers: Double the garlic for a bolder flavor.
Herby: Sprinkle fresh coriander or spring onions before serving.
Asian fusion: Serve with rice noodles or bok choy.
5. Storage
Fridge: Keep leftovers up to 2 days in a sealed container.
Freezer: Freeze raw marinated steaks up to 2 months; thaw before grilling.
Reheat: Warm sliced steak gently in a pan or microwave for 30 seconds.
