Add the beef cubes and stir until everything is well combined.
1 ¼ pound chuck roast
Mix in the tomato paste and coconut milk.

Place the cinnamon stick and bay leaves on top.

Put the lid on the slow cooker.
Cook on LOW for 6 to 8 hours or on HIGH for 4 to 6 hours until the beef is soft and cooked through.
Before serving, take out the cinnamon stick and bay leaves.

1. Can I use a different type of beef? Yes, you can. Round roast or tri-tip roast are also good options.2. Want to make it spicier? Add some chili flakes or chopped fresh chili to taste.3.
