Ingredients
- 2 tablespoons butter
- 2 onions, finely chopped
- 3 cloves garlic, pressed or chopped
- 1 inch fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- ½ teaspoon ground cardamom
- 1 teaspoon sea salt
- 3 tablespoons sugar
- 1 ¼ pound chuck roast, cut into small cubes
- 2 tablespoons tomato paste
- 2 cups coconut milk
- 1 cinnamon stick
- 3 bay leaves
All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can select which type of amount you would like to see.
Instructions
- Put the butter, onions, garlic, ginger, turmeric, coriander, cardamom, salt, and sugar in the slow cooker.2 tablespoons butter, 2 onions, 3 cloves garlic, 1 inch fresh ginger, 1 teaspoon ground turmeric, 1 teaspoon ground coriander, ½ teaspoon ground cardamom, 1 teaspoon sea salt, 3 tablespoons sugar
- Add the beef cubes and stir until everything is well combined.1 ¼ pound chuck roast
- Mix in the tomato paste and coconut milk.2 tablespoons tomato paste, 2 cups coconut milk
- Place the cinnamon stick and bay leaves on top.1 cinnamon stick, 3 bay leaves
- Put the lid on the slow cooker.
- Cook on LOW for 6 to 8 hours or on HIGH for 4 to 6 hours until the beef is soft and cooked through.
- Before serving, take out the cinnamon stick and bay leaves.
Notes
- Refrigerator: Keep leftovers in a sealed container for up to 3 days.
- Freezer: Freeze in portions. Keeps well for up to 3 months.
- Reheat: let it thaw in the fridge overnight, and then warm it on the stove or in the microwave until hot.
