Instructions
Heat olive oil in a large pan.
2 tablespoons olive oil
Add potatoes and herbs, and fry for 10 minutes until golden.
2.2 pounds potatoes,
1 teaspoon dried thyme,
1 teaspoon dried oregano,
1 teaspoon dried rosemary
Stir in cherry tomatoes; fry for 3 minutes.
7 oz. cherry tomatoes
Add spinach stir-fry for 2 minutes until wilted.
14 oz. fresh spinach
Remove from heat, mix in feta, season with salt and pepper, and serve.
4 oz. feta cheese,
¼ teaspoon salt,
⅛ teaspoon ground black pepper
NOTES
1. Variations
Replace feta with goat cheese.
Add black olives for a stronger Greek flavor.
Use zucchini cubes instead of potatoes for a lighter dish.
2. Storage
