Instructions
Mix the sugar, syrup, butter and water in a small saucepan and bring it to a boil.
¾ cup dark brown sugar, ½ cup Dutch sugar syrup, 3 tablespoons butter, 2 tablespoons water
Boil for about 7–8 minutes until the temperature reaches 310 ℉.
Put a baking mat on a baking tray and pour the liquid on top of the mat.
Stir the mixture with a spatula until it becomes a firm mass.
Form it into a long, thick strip.
Cut rectangles from the strip.
Press a lollipop stick into the toffee and let it harden for about 1 hour at room temperature.
NOTES
1. Candy stage: Aim for 310°F / 155°C (or use the cold-water test: syrup hardens instantly = ready).2. Stir to set: Mixing with a spatula helps the syrup cool faster and firm up.3. Cutting: Wet the knife blade slightly so the toffee sticks less and cuts cleaner.4. Variations: Use golden syrup (or maple syrup) for a different flavor, or skip the sticks and shape into wrapped toffees.5. Storage
Store the toffee lollipops airtight at room temperature for up to 2 weeks.
