Place the chicken between two sheets of plastic wrap. Pound flat.

Sprinkle both sides of each fillet with one tablespoon of herb mix.

Wrap each chicken breast with one slice of Serrano ham.
4 slices Serrano ham
Brush with olive oil.

Grill about 5 minutes on each side, until cooked through.
NOTES
1. Can I use a different type of ham? Parma ham, or prosciutto also works well. Don’t use bacon—it’s too fatty and doesn’t get crispy in the same way.2. Storage
