Grilled Chicken with Italian Herbs and Ham-Summer Dinner Idea
A few years ago, I joined an Italian cooking class. One of the dishes was chicken wrapped in ham with herbs. It was so tasty that I had to try it at home.
So on a hot summer day, I grilled my version on the BBQ. What a good idea! The chicken turned out to be soft, and the ham crispy. It reminded me of grilled peaches with ham-easy ingredients and a big flavor. This recipe is just perfect when you want something quick, delicious, and impressive.
Tips for Serrano Wrapped Chicken
This chicken is super easy, and these tips make it even better.
- Pound the chicken flat: Put the fillets between plastic wrap and pound with a rolling pin. They will grill more evenly this way.
- Use real Serrano ham: Don't use cheap substitutes. This ham offers the best flavor and a crispy outside.
- Make extra herb mix: Store leftovers in a jar. Great for pasta sauce or flavoring meatballs.
- Don't grill too hot: Too much heat will burn the ham before the chicken is ready. Use medium heat.
- No BBQ? No problem: Use a grill pan or oven (390 °F / 200 °C) for about 20 minutes.
- Always check if the chicken is done: There should be no pink inside, and the juices should be clear. A food thermometer should show 160-167 °F (72-75 °C).

Italian Herb Mix (about 13 tablespoon)
- 3 tablespoons basil, dried
- 5 tablespoons dried oregano
- 2 tablespoons dried rosemary
- 2 tablespoons dried thyme
- ½ tablespoon chili flakes
- 1 tablespoon garlic powder
Italian Chicken spiced with Serrano ham
- 4 chicken breast, boneless
- 4 tablespoons Italian herb mix, (recipe above)
- 4 slices Serrano ham, deli
- 4 tablespoons olive oil

Instructions
Italian Herb Mix
- Mix everything in a bowl. Store in a sealed jar for up to 6 months in a dry and cool place.3 tablespoons basil, 5 tablespoons dried oregano, 2 tablespoons dried rosemary, 2 tablespoons dried thyme, ½ tablespoon chili flakes, 1 tablespoon garlic powder
Tuscan Chicken
- Place the chicken between two sheets of plastic wrap. Pound flat.4 chicken breast
- Sprinkle both sides of each fillet with one tablespoon of herb mix.4 tablespoons Italian herb mix
- Wrap each chicken breast with one slice of Serrano ham.4 slices Serrano ham
- Brush with olive oil.4 tablespoons olive oil
- Grill about 5 minutes on each side, until cooked through.
Notes
- Refrigerator-raw Tuscan chicken: Wrap and season ahead of time. Store it for a few hours in the fridge or freeze it for up to a month.
- Refrigerator-Grilled chicken: Store in the fridge for up to 2 days, covered.
- Freezer: Freeze up to 2 months. Let it defrost in the fridge.
