Mediterranean herb whole-wheat crackers
1cupwhole wheat flour
1cupall-purpose flour
⅔teaspoon salt
¾cupwater 100 °F / 37 °C
¼cupolive oil extra vierge
1teaspoonrosemary fresh , finely chopped
1teaspoonoregano fresh , finely chopped
1teaspoonbasil fresh , finely chopped

Instructions
Mix all the ingredients until a cracker dough forms. Knead for at least another 5 minutes. When the dough falls apart, pour a little extra water on it. When it sticks, add a little extra flour.
1 cup whole wheat flour, 1 cup all-purpose flour, ⅔ teaspoon salt, ¾ cup water , ¼ cup olive oil , 1 teaspoon rosemary, 1 teaspoon oregano, 1 teaspoon basil
Place dough in a bowl, cover it with a wet towel, and let the dough rest for at least 30 minutes at room temperature.
Preheat the oven to 430 °F (220 °C).
Roll the dough very thinly (⅛ inch, ¼ cm). Cut the dough into squares. Make sure you got equal pieces.
Layer sheet pans with baking paper. Put the crackers on them.
Brush each cracker with olive oil and sprinkle some sea salt on top.

Bake for 20 minutes or until the cracker becomes golden brown.
NOTES
1. - OvenPreferably use a conventional oven. When using a conventional oven, set the temperature to 430 °F (220 °C). In a convection oven, 390 °F (200 °C) is enough.2. - Roll The easiest way is to take two baking papers and roll the dough between them until the desired thickness. You could also use a pasta machine to form a thin dough.3. - Storage Store the cracker bread in an airtight container for five days in a cold place. You can’t store them in the fridge or freezer.
