Melt the butter in the pan

Add the garlic and Italian herbs and stir-fry for 30 seconds.

Then add the flour and cook for two minutes, stirring with a wooden spatula.

Reduce the heat to low and pour in the stock little by little while stirring with a whisk. You don't get lumps.
2 cup chicken stock
Bring the sauce to a boil and reduce the heat to low.
Mix in the cooking cream and Parmesan cheese until the cheese has melted and the sauce is nice and thick.

1. Roux tip: When making the roux, fry the flour for at least two minutes before diluting it. Otherwise, you will end up with a sauce that tastes like flour (which is not good).2. Variations
Spicy: Add a pinch of cayenne pepper if you want a spicier version.
Herbs: You can also use fresh herbs instead of dried Italian herbs. Then add it in the last step, together with the parsley, and mix well.
Parmesan cheese: You can also use Pecorino or Grana Padano instead. These cheeses all have their own taste, so you can vary.
Refrigerator: Store the Garlic Parmesan Sauce in an airtight container in the fridge. This keeps it good for up to 3 days.
Freezer: You cannot store the cheese sauce in the freezer; otherwise, it may curdle.
Reheat: Add three tablespoons of milk to the sauce. Then heat it over low heat, very slowly, while stirring until it is hot (but not boiling). Otherwise, it may curdle.
