Easy Tomato Soup With Cheese Sandwich
On Valentine's Day, while others were going for fancy dinners, I felt like something nostalgic. And because Carnival often falls around the same time in our region, it's usually a busy period. I wanted something simple, homemade, and comforting.
So I made this Dutch classic: tomato soup and a grilled cheese toastie. It was everything I needed. Since then, it's become a little tradition. Not just for Valentine's Day, but for any day when I want a warm, cozy meal without much effort.
Tips for the Best Homemade Tomato Soup With Cheesy Toast
- Use ripe tomatoes for extra sweetness and flavor.
- Fry the tomatoes before simmering for a deeper taste.
- No sandwich maker? Use a pan and press with a plate.
- Like it creamy? Stir in a splash of cream or coconut milk.
- Add herbs like basil or oregano for more flavor.

Ingredients
Tomato soup
- 1 tablespoon vegetable oil
- 1 shallot, finely chopped
- 1 clove garlic, minced
- 1¼ pound tomatoes, quartered
- 4½ cups vegetable broth
- 1 teaspoon sugar
- 1 sprig dried thyme
- salt and pepper, to taste
- 2 sprigs Fresh Parsley, chopped
Grilled cheese sandwich
- 4 slices white bread
- 2 tablespoons butter
- 2 slices Gouda cheese, or Cheddar
All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can select which type of amount you would like to see.
Instructions
Tomato soup
- Heat oil in a large pot.1 tablespoon vegetable oil
- Add shallot and cook on low for 5 minutes until soft.1 shallot
- Stir in garlic and cook for 30 seconds.1 clove garlic
- Add tomatoes and fry for 1 minute.1¼ pound tomatoes
- Pour in broth, add sugar, and thyme.4½ cups vegetable broth, 1 teaspoon sugar, 1 sprig dried thyme
- Bring to a boil, then simmer for 30 minutes.
- Blend until smooth. Season with salt and pepper.salt and pepper
- Top with chopped parsley before serving.2 sprigs Fresh Parsley
Cheese Toastie
- Butter one side of each bread slice.4 slices white bread, 2 tablespoons butter
- Place cheese between slices, buttered side out.2 slices Gouda cheese
- Toast in a sandwich maker or pan until golden and melted.
Notes
- Add red pepper or chili for a spicy soup.
- Spread pesto or cream cheese inside the toastie.
- Add meatballs to the soup for a hearty meal.
- Use multigrain or sourdough instead of white bread.
- Top the soup with croutons or crispy bacon.
- Fridge: Keep tomato soup in the refrigerator for up to 3 days.
- Freezer: Freeze soup in airtight containers for up to 3 months.
- Reheat: Warm the soup in a pan over low heat. Toast the sandwich fresh.
