- 1 clove garlic, finely chopped
- 1 shallot, finely chopped
- 2 cups sieved tomatoes
- 1 teaspoon sugar
- ½ oz. fresh Italian herbs, (such as basil, thyme, rosemary)
- 1 bay leaf
- salt and pepper, to taste
Pizza
- 1 pizza base, (ready-made or homemade)
- pizza sauce, (from above)
- 1 tablespoon olive oil
- 10 oz. fresh spinach
- 9 oz. feta cheese
- 8 cherry tomatoes
- 3 tablespoons pine nuts
- 1 tablespoon Italian herbs

Instructions
Pizza sauce
- Heat the olive oil in a saucepan.1 tablespoon olive oil
- Add garlic and shallot, and cook 3 minutes until soft.1 clove garlic, 1 shallot
- Stir in sieved tomatoes and sugar.2 cups sieved tomatoes, 1 teaspoon sugar
- Place herbs and bay leaf on top. Bring to the boil, then simmer for 10 minutes, stirring occasionally.½ oz. fresh Italian herbs, 1 bay leaf
- Place the herbs on top of the sauce and bring to the boil.
- Then lower the heat and let it simmer for 10 minutes, stirring occasionally.
- Remove herbs and season with salt and pepper.salt and pepper
Pizza Preparation
- Preheat oven to 430 ℉.
- Place the pizza base on a baking tray. Spread with the prepared pizza sauce.1 pizza base, pizza sauce
- Heat one tablespoon of olive oil in a pan. Wash spinach, stir-fry 2 minutes, then drain well.1 tablespoon olive oil, 10 oz. fresh spinach
- Spread spinach and crumble feta over the base.9 oz. feta cheese
- Halve cherry tomatoes, place on top.8 cherry tomatoes

- Bake 15-20 minutes until golden and crisp.
Notes
- Add black olives for a Mediterranean twist.
- Use sun-dried tomatoes instead of cherry tomatoes for extra richness.
