- 1 tablespoon olive oil
- 1 shallot, finely chopped
- 1 ¼ pound ground beef
- 2 tablespoons Taco seasoning
- 14 oz. diced tomatoes, canned
- 5 oz. corn kernels, drained
- ¾ cup ricotta
- ¼ cup mozzarella
- ½ oz. Fresh Parsley, or cilantro, chopped
- 8 tortilla, medium
- ¼ cup grated cheddar cheese, grated
- ½ cup sour cream

Instructions
- Preheat oven to 400 °F or 350. °F Grease a 10 x 13 inch (24 x 33 centimeter) baking dish.
- Heat oil in a pan and sauté shallot for 3 minutes until soft.1 tablespoon olive oil, 1 shallot
- Add taco seasoning and ground beef; cook until browned.1 ¼ pound ground beef, 2 tablespoons Taco seasoning
- Stir in diced tomatoes and corn; simmer for 5 minutes.14 oz. diced tomatoes, 5 oz. corn kernels
- Mix ricotta, mozzarella, and herbs in a separate bowl.¾ cup ricotta, ¼ cup mozzarella, ½ oz. Fresh Parsley
- Layer 2 tortillas in the baking dish.8 tortilla
- Spread half of the beef mixture on top.
- Add 2 tortillas and spread the ricotta mixture.
- Add 2 more tortillas and the remaining beef sauce.
- Finish with the last 2 tortillas, cheddar cheese, and herbs.¼ cup grated cheddar cheese
- Bake 15-20 minutes until golden and bubbly.
- Serve with a dollop of sour cream.½ cup sour cream
Notes
- Replace ricotta with cream cheese for a richer version.
- Add chopped jalapeños between layers for heat.
- Fridge: Keep covered in the refrigerator for up to 3 days.
- Freezer: Freeze before baking for up to 2 months. Bake from frozen at 350 °F (180 °C) for 35-40 minutes.
