This slow cooker rotisserie chicken is delicious and juicy with crispy skin. The recipe can't go wrong and it's one of the easiest whole chicken recipes I know. The chicken can be placed in the crockpot in just 10 minutes. And then you don't have to worry about it anymore. And the herbs, salt, and ground black pepper give a great taste to this delicious dinner recipe.
Well, then you read on the Internet that a fellow food blogger has passed us by. Tessa from I am cooking with love passed away in early February. I have been following her blog for a few years and have met Tessa (together with Marina) a number of times at a food event.
What struck me was that she always radiated cheerfulness. A positive attitude. And you saw that on her blog and social media.
No waste!
So when Marina made an appeal cooking something from Tessa's blog because she would love it a lot, I immediately looked around.
And that's when I came across this delicious recipe that made my mouth water when I read it. I also noticed that, just like I always do, she cooked a delicious chicken stock from the remains of bones.
That chicken stock is now in the refrigerator to make a delicious chicken soup tomorrow. Tessa this blog is for you!
- Whole chicken: Buy the best whole chicken you can get your hands on. About 2 to 3 pounds. Take it out of the refrigerator and remove the ropes. You can also replace the chicken with guinea fowl or quail.
- Lemon: Put the lemon in the cavity of the chicken. There it will get hot and the juices will release. This ensures that the chicken becomes tender and it also cooks from the inside out.
- Onion: The onion creates a layer between the chicken and the bottom of this crockpot. This allows the air to circulate around the chicken (and giving it a crispy crust). And it enhances the flavor.
- Spices: Ground paprika, salt, onion, thyme, garlic and (cayenne) pepper are the spices used for the rub, and they all combine well with chicken. Flavor the inside and outside of this slow cooker rotisserie chicken for even more taste.
🔪 How to prepare a slow cooker rotisserie chicken?
Step 1 flavor the chicken. The easy part gives a great flavor in a short time. Halve your lemon. Peel the onion and cut it into rings. Mix the ground paprika, salt, onion powder, thyme, garlic powder, and both peppers for a spice blend.
Rub the chicken with this mixture. In the cavity of the chicken place the lemon parts and the spices that are left after the rub.
Step 2 put the rotisserie chicken into the slow cooker. Spread the onions on the bottom of the crockpot. Put the chicken on top of the onions. Put the lid on the slow cooker and turn it on for 5 hours on high heat.
The meat will be done by that time. But if you aren't back in time, never mind. Cooking in a crockpot doesn't take a timer. You can even get away with two hours more.
Step 3 check if your chicken is done. This slow cooker rotisserie chicken should be done because you don't want to get food poisoning. So check the inside temperature with a thermometer in the thickest part of the chicken (but don't touch a bone while doing so).
When the temperature is at least 165 degrees Fahrenheit (75 degrees Celsius) your chicken is ready to serve.
Step 4 Grill the chicken (optional). This step is completely optional, but you won't regret it. Turn the grill on. Put the slow cooker rotisserie chicken in a casserole dish and add the juices and onion.
Broil for 10 minutes to get a crispy crust. And if you don't have a grill you can also bake this chicken in the oven. Use top heat if you can. And keep a close eye on the chicken so it won't burn.
- The slow cooker is a substitute for cooking in the oven or slow-cooking meat and chicken over a petroleum burner And the advantage? The food doesn't burn and it's a much safer method. If you don't have one yet, I can definitely recommend it!
- Turn on the slow cooker before you go to work. Then you can put the chicken on the table when you get home.
- By putting a lemon in the cavity of the chicken, lemon juices are released, which makes the meat extra juicy and gives a lot of flavors.
- By placing the chicken under the grill for another 10 minutes afterward, you get a delicious crispy outside combined with a juicy inside. Really delicious.
- Replace the lemon with slices of orange for a delicious fresh taste.
- Replace the paprika with smoked paprika for an intense flavor.
- Let the chicken cool down quickly and keep it covered for up to 2 days in the refrigerator.
- You can also remove the chicken meat from the bones and freeze it. Let the chicken cool and put it in a freezer bag or container. The chicken meat will remain good for 2 months.
- Any left-over chicken? Put them in a pan, fill with water and add vegetables such as leek, carrot, and celery. Also, add some fresh herbs. Bring to a boil and simmer for 3 hours. Strain and you have a delicious stock, you can use for a lot of other things. And you can also prepare it in the slow cooker. Put everything into the pot and let it simmer for 5 hours on low heat. This way you use your slow cooker rotisserie chicken to the fullest.
- Have you made stock and do you want to store it? Cool it back quickly and store it in the refrigerator for up to 2 days. Or freeze the stock and store it in the freezer for up to 2 months.
Is it necessary to add extra liquid?
No, it's not necessary to add extra liquid to this slow cooker recipe. The crockpot is a closed pan and almost no liquid will evaporate. And because the chicken is baked, juices will be released. They will collect in the slow cooker and will give a moist environment. So the chicken will cook in its own juice.

- 1250 grams whole chicken

- Put all the spices in a bowl and stir well.
Rotisserie Chicken
- Halve the lemon.
- Cut the onion into rings.
- Spread the onion over the bottom of the Slow Cooker.
- Place the chicken in front of you and remove all strings.
- Cover the outside of the chicken with the spice mixture.
- Place the lemon and leftover spice mixture in the chicken cavity.
- Carefully pick up the chicken and place it on top of the onions on the bottom of the slow cooker.
- Turn the slow cooker on at the highest setting and leave it for at least 5 hours.
- Check whether the chicken is cooked by measuring with a meat thermometer into the thick part of the chicken. This should indicate 165 degrees Fahrenheit (75 degrees Celsius). Make sure you don't hit the bone when measuring the temperature of the chicken, because that heats up faster and can therefore already be warm enough, while the rest of the chicken is not yet.
- Remove the chicken from the slow cooker when it reaches the right temperature. You can eat it right now (but I'm positive you can't resist the tip below to make the skin crispy and crispy):
TIP!
- Turn on the oven grill and place the chicken including all juices in a roasting pan.
- Slide it under the grill for 10 minutes for a delicious crispy skin.
