Frikadel Pan - Savory Indonesian Meatloaf
When I was a child, we had Indonesian neighbors. The smell from their kitchen was amazing-spices, garlic, and fried onions-it made me hungry every time. On special days, they invited us over. I still remember the delicious food: Balinese eggs, nasi goreng, rendang… That's when I first tasted the Indonesian kitchen. I loved it right away.
Years later, I started cooking those dishes myself. This Frikadel Pan was one of the first I tried. It brought back warm memories of those family dinners. The recipe is simple. The spices give it that cozy Indonesian flavor, without making it too spicy. The mashed potatoes make the inside soft. The oven gives it a nice crispy layer on top.
You can serve it in small cubes on a snack board or with white rice and a fresh cucumber salad. I sometimes use it for a quick lunch or cut it into pieces for a party snack. It always works.

Ingredients
- 1 tablespoon butter, for greasing the baking dish
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 4 cloves garlic, pressed
- 1 teaspoon sambal oelek
- ¼ cup milk
- 1 beef stock cube
- 1 ¼ pound ground beef
- 1 teaspoon ground cloves
- ½ teaspoon ground nutmeg
- 1 tablespoon Kecap Manis, sweet soy sauce
- ½ tablespoon celery salt
- 2 eggs, size L
- ¼ cup milk, lukewarm
- 1 pound mashed potatoes

Instructions
- Preheat the oven to 350 ℉.
- Grease an 8 x 8 inch (20 x 20 cm) baking dish with butter.1 tablespoon butter
- Heat the oil in a frying pan.1 tablespoon vegetable oil
- Add the onion, garlic, and sambal. Fry for 2 minutes.1 onion, 4 cloves garlic, 1 teaspoon sambal oelek
- Warm the milk and stir in the stock cube until it melts.¼ cup milk, 1 beef stock cube
- Put the ground beef in a large bowl.1 ¼ pound ground beef
- Add the spices, Kecap, celery salt, eggs, warm milk, onion mix, and mashed potatoes.1 teaspoon ground cloves, ½ teaspoon ground nutmeg, 1 tablespoon Kecap Manis, ½ tablespoon celery salt, 2 eggs, ¼ cup milk, 1 pound mashed potatoes
- Mix everything well with a spoon or your clean hands.
- Put the mixture in the baking dish and smooth the top.
- Bake for 40-45 minutes, until golden brown and cooked through.
Notes
- Cut into cubes for snacks
- With a fresh cucumber salad or atjar
- With nasi goreng or white rice for a complete meal
- Try it with homemade satay sauce on the side
- Fridge: up to 3 days (in a closed container)
- Freezer: up to 2 months (in portions)
- Reheat: Warm in the oven at 160 °C (320 °F) until hot.
