Easy Homemade Nasi Goreng Recipe
Every time I make nasi goreng (Indonesian fried rice), I remember the old days. We would get Chinese food occasionally, which was a real treat. Babi Pangang, Foe Yong Hai, and, of course, nasi goreng were on the table. If there was anything left, it was fried the next day. That was so delicious!
Now, I make it myself, and that is actually even more fun. You can choose exactly what you want in it. That is juicy chicken, ham cubes, and crispy fried bacon. But the secret is in the nasi goreng flavor, through trassie and nasi goreng spice mix (which you can easily make yourself). It is a fried rice dish that makes everyone happy.
And the best part? You can completely adapt it. No chicken in the house? Use shrimp or minced meat. Add lots of vegetables or make it extra spicy with sambal. This way, you can make it exactly the way you want! Perfect comfort food straight from your kitchen.
What do you need?
Why use cooked rice?
It will need more than cooking the rice alone to give it the right flavor. It will not absorb the flavors. However, frying the rice will do the trick. White rice, jasmine rice, or basmati work best. Make sure the rice is cooled and dry. Cooled rice is less sticky, giving you that perfect, crispy texture. Spread the rice out on a baking sheet to cool it down faster.
What is trassie?
Trassie is a fermented shrimp paste. It has a strong smell but a deep, savory flavor. Use only a small amount; otherwise, the flavor will be too overpowering. No trassie? You can try fish sauce, although it will taste different.
Preparation
- Herb paste: Make a herb paste by grinding shallots, garlic, red pepper, and trassie in a food processor or with a mortar.
- Frying chicken and bacon: Sprinkle the chicken cubes with salt and pepper. Heat one tablespoon of oil in a wok and fry the chicken until golden brown. Remove from the wok and fry the bacon in the same pan until crispy. Set both aside.
- Frying herb paste: Heat 2 tablespoons of oil in the wok and fry the herb paste for 5 minutes on medium heat. Keep stirring well so that it does not burn.
- Frying rice and finishing: Add the cooled rice and stir-fry until the rice gets a nice color and becomes slightly crispy. Mix in the Kecap manis and nasi spices. Add the chicken, bacon, and ham cubes and mix well. Fry an omelet with the eggs, cut it into strips, and add to the nasi together with the leek. Garnish with finely chopped spring onion and possibly a fried egg, and serve immediately.

For the nasi goreng
- 3 shallots finely chopped
- 4 cloves garlic finely chopped
- 1 red chili pepper without seeds, finely chopped
- ½ tablespoon trassie
- ½ pound chicken breast cubed
- salt and pepper to taste
- 3 tablespoons oil
- 6 oz. bacon bits
- 3 cups uncooked rice cooked until done
- 4 tablespoons Kecap Manis
- 2 teaspoons nasi goreng spice mix
- 6 oz. ham cubes
- 1 leek thinly sliced
- 3 eggs
Garnish
- 2 spring onions finely chopped
- 5 eggs fried, optional

Instructions
- Making the spice paste: Grind the shallots, garlic, red pepper and trassie finely in a food processor or with a mortar.3 shallots, 4 cloves garlic, 1 red chili pepper, ½ tablespoon trassie

- Add the cooled rice and keep stirring while frying. The rice will get a nice color and become slightly crispy.3 cups uncooked rice

- Put the fried chicken, ham cubes, and bacon back in the wok. Mix everything together and turn the heat down.6 oz. ham cubes
- Beat the eggs and fry an omelet. Cut the omelet into strips and add it to the nasi together with the leek. Stir everything together.1 leek, 3 eggs
- Taste the nasi to see if it needs more salt or Kecap. Serve the nasi with a fried egg on top and garnish with finely chopped spring onions.2 spring onions, 5 eggs
Notes
- Refrigerator: Store the nasi goreng covered in the refrigerator for up to two days.
- Freezer: You can store the fried rice for up to two months in a freezer box or bag. Let it defrost in the refrigerator.
- Reheat: Heat in the microwave. Or fry in a frying pan or wok until warm.
