Yesterday morning I opened the curtains and the sun caressed my face. That reads as good as it was. The first real super nice spring day. Have you been outdoors? I made a nice walk around our neighborhood and came across a lot of people, not from our village. We live in a village near the river the Maas where the fresh air blows deliciously over the dikes, you can lie on the floodplains of the Maas (but it was a bit too cold yet), and you're in less than 5 minutes walk from a forest. And that is so alluring that more people come to our area. We are actually a little spoiled around here with such a beautiful setting. No wonder it is so crowded with tourists. But that aside.

Such lovely weather I'm always following by cooking a bit lighter. That fits with the weather. I don't cook stews in the summer and I prepare a salad when I have a lovely summer's day lunch outside on the terrace. And my breakfast I adjust accordingly. So I felled like making a smoothie and I looked at the fruit bowl what was in there. Pears and also a can with coconut water in the refrigerator. A touch of vanilla to taste even better the flavor of the pear. Blended well (for the feeling of drinking a milkshake) and a straw in it. Lovely.

Smoothies are actually a kind of healthy milkshakes and maybe they are therefore so popular. They contain a bit more fruit, more fibers and usually a lot less sugar. You make them with milk, yogurt (or perhaps ice cream), but just as well with almond milk, rice milk or, as in this case, coconut water. Therefor, a smoothie is suitable for everyone.

Vanilla pear smoothie

Ingredients
- 3 pears
- 350 ml coconut water
- 1 teaspoon vanilla extract
- ½ teaspoon mint finely chopped
Instructions
- Cut the core from the pears and cut the remainder into coarse pieces.
- Add the pear along with the coconut water and vanilla in a blender and mix at least 2 minutes.
- Pour into 2 glasses and put a straw in it.
- Sprinkle with mint leaves.
