Drumsticks with Mango, Broccoli and Almond, A Tasteful Recipe
This is a favorite meal with Drumsticks here in the house. Our children like to eat this recipe because drumsticks with mango sauce, broccoli, and almond have a delicious flavor. And then it is also simple to make.
The meat tastes delicious by seasoning the drumsticks well and rolling them in bacon, and the slow cooking makes it wonderfully tender. The sauce you make from all the stew juices and the mango gives a little sunshine to your plate. The broccoli is cooked just right, goes very well with the rice, but is also delicious with the sauce and the slivered almonds. Give it a try because this is really tasty!
What do you need for Mango Chicken, Broccoli, and Rice?
You require the following ingredients to prepare these Mango Chicken Drumsticks with Bacon. You can find the correct amounts in the recipe card at the bottom of the blog:

Ingredients Drumsticks with mango sauce
- Curry: is a mixture of different spices. It is spicy, pungent, and aromatic.
- Honey: gives a slightly spicy sweetness.
- Olive oil and butter: To fry the drumsticks. This way, you can make the fats hot without burning the butter (and you still have that delicious taste). The butter is also the base of the sauce. Use unsalted butter.
- Drumsticks: These are tiny chicken legs. It is the bottom part of the chicken leg.
- Lemon: For a fresh citrus accent.
- Mango: Soft and juicy and wonderfully sweet. Remove the skin and pit and cut into small cubes. Here you will find a video where I show you how you can do that quickly and easily in two ways.
- Parsley: This gives a fresh taste to this meal.
- Bacon slices: It is cured pork belly cut into thin slices after salting, drying, and smoking. It tastes salty and spicy.
- Tomato Paste: To deepen the flavor of the sauce. Let the paste cook for two minutes before adding the stock; it will be nice and sweet (not sour).
Nice with it:
- Broccoli: Cut the broccoli into florets and place in a pan. Top up with cold water and bring to a boil. Let it cook until you can easily pierce it with a fork (you may still feel some resistance if you like a bite). Broccoli can also be steamed. Hang the broccoli in a steamer basket over boiling water and cover. Steam for 3 to 8 minutes.
- Rice: Cook the rice according to the instructions on the package. You can choose white rice or basmati rice; if you want more fiber, you can prepare brown rice.
- Almond shavings: As the name says: slivered almond. It has a slightly sweet, nutty taste.

- Make a marinade by mixing curry, honey, oil, salt, and pepper. Brush the drumsticks with this and wrap them in bacon.
- Melt butter in the pan and add the oil. Fry the drumsticks on all sides until golden brown. Remove them from the pan. Spoon the tomato paste into the pan and cook for 2 minutes. Then add the broth and bring to a boil. Return the chicken to the pan, cover, and simmer for 30 minutes until the chicken is cooked through. Meanwhile, cook the rice and broccoli until done.
- Remove the chicken from the pan. Pour the shortening from the drumsticks into a saucepan.
- Add water and lemon juice, and grate mango cubes and parsley. Heat until hot (it doesn't have to boil).
Serve the drumsticks with the sauce, rice, and broccoli. Sprinkle almond shavings and fresh parsley on top.
Tips, Substitutions, and Variations
- Drumsticks: Chicken legs are also very suitable for this recipe. The cooking time may be longer. Check the temperature in the core of the meat with a thermometer. It should be 162 °F (ca. 72 °C).
- Spicy: Add ½ teaspoon of chili powder to the sauce.

Marinated Drumsticks
- 1 tablespoon curry powder
- 1 tablespoon honey
- 3 tablespoons olive oil
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 8 slices smoked bacon
- 8 chicken drumsticks
- 1 tablespoon butter
- 1 tablespoon oil
- 3 tablespoons tomato paste
- ½ cup chicken stock
Sauce
- ¼ cup water
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- ½ mango, peeled and diced
- 2 tablespoons Fresh Parsley, finely chopped
Serve with (incl. garnish).
- 2 pounds broccoli, cooked (see tips)
- 1 pound white rice, prepared according to the instructions on the package.

- 2 tablespoons Fresh Parsley, finely chopped

Instructions
Marinated Drumsticks
- Mix the curry powder, honey, olive oil, salt and pepper.1 tablespoon curry powder, 1 tablespoon honey, 3 tablespoons olive oil, ¼ teaspoon salt, ⅛ teaspoon ground black pepper
- Brush the drumsticks with the marinade and wrap each drumstick in bacon.8 slices smoked bacon, 8 chicken drumsticks
- Melt the butter in a Dutch oven or skillet and add the oil.1 tablespoon butter, 1 tablespoon oil
- Fry the chicken on all sides until golden brown. Remove from the pan and set aside.
- Add the tomato paste and cook for 2 minutes until it smells sweet.3 tablespoons tomato paste
- Pour the chicken stock into the pan and mix well. Bring to a boil.½ cup chicken stock
- Return the drumsticks to the pan and cover with a lid. Simmer for 30 minutes until the chicken is cooked.
Mango Sauce
- Remove the drumsticks from the pan and place on a plate. Cover with aluminum foil.
- Add the water, lemon, mango, and parsley to the remaining liquid (or use a clean pan). Make sure this is hot (it doesn't have to boil).¼ cup water, 1 tablespoon lemon juice, 1 teaspoon lemon zest, ½ mango, 2 tablespoons Fresh Parsley
- Serve the drumsticks with mango sauce, rice, and broccoli. Garnish with parsley and enjoy!2 pounds broccoli, 1 pound white rice, 3 tablespoons Almond slivers, 2 tablespoons Fresh Parsley
Notes

- You can also use frozen mango.
- Cut the broccoli into florets and place in a pan. Top up with cold water and bring to a boil. Let it cook until you can easily pierce it with a fork (you may still feel some resistance if you like a bite).
- Broccoli can also be steamed. Add the broccoli florets to a steamer basket over boiling water and cover. Steam for 3 to 8 minutes.
Let everything cool quickly.
- Refrigerator: Keep everything covered in the fridge for up to 2 days.
- Freezer: Pack the drumsticks with mango in a freezer box (this is more convenient because of the sauce). You can freeze the broccoli and rice separately. Let thaw in the refrigerator.
- Reheat: Heat in a pan until it is hot. You can also put it in a baking dish. Cover the dish with aluminum foil. Bake at 320 °F (160 °C) for 20 minutes, or until completely hot.
