Tender chicken skewers in a creamy, sweet cashew nut sauce. Served in a shot glass it became a delicious bite to eat out of hand.
A peanut allergy is not convenient. Believe me. I got it when I was in my early twenties. It developed so to speak. And so I built a fondness for peanut sauce from my past before the allergy. So one of the snacks I was fond of most in my teen years was namely a spring roll with egg and peanut sauce (yes we all have our flaws ;-)).
But for more than a decade now, I can’t eat any peanuts anymore. And that’s not nice, not nice at all. Besides the fact that I can not eat out normally (I’m happy when I got no allergic reaction) I miss the occasional tasty things that I can’t eat anymore. Well the grass is always greener on the other site isn’t it.
But I got lucky. I just have a peanut allergy and no nut allergies. A nut allergy is quite different. And so I do occasionally make this cashew nut sauce. As a replacement for my peanut sauce. Also quite tasty. Today I serve it with a delicious chicken skewer in a shot glass. A nice bite to serve for example on New Years Eve. But let’s face it, a chicken satay in cashew nut sauce is always delicious!

Ingredients
Chicken satay
- 1 clove garlic
- 1 teaspoon ginger syrup
- 1 tablespoon orange juice
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 300 grams chicken breast
Cashew nut sauce
- 150 grams cashew nuts
- 3 tablespoons dark brown sugar
- 2 tablespoons soy sauce
- 400 ml milk
- pinch sambal optional

Instructions
Chicken satay
- Make a marinade of garlic, ginger syrup, orange juice, soy sauce and sesame oil.
- Cut the chicken into small cubes and let it marinate for at least 30 minutes.
- Prick them on a satay stick.
- Bake them into the frying pan (or grill pan if you have one).
Cashew nut sauce
- Grind the cashews fine.
- Mix the crushed nuts with the brown sugar, soy sauce and milk and bring to a boil, while keep stirring.
- Let the cashew nut sauce thicken.
- Season with sambal at taste.
- Put 2 tablespoons of sauce at the bottom of a glass.
- Put the chicken skewers in it.
- Serve immediately.
