Curried Chicken and Bacon Sandwiches for Lunch
During a boat trip, where the weather unfortunately did not cooperate, but which was very pleasant, these delicious sandwiches were served. Everyone loved them! These sandwiches were a hit.
My family was also very enthusiastic when I made them at home later. And rightly so: the combination of tender smoked chicken, egg, and crispy bacon in a creamy curry sauce really makes everything taste better. So, if you want to serve something special for lunch, high tea, or afternoon tea, this is a real must!

What do you need?

- Smoked chicken: This chicken is already cooked and deliciously tender. Note: if you are pregnant or have poor health, it is better to use poached chicken.
- Crème fraîche: This makes the sauce extra creamy. You can also use sour cream or Greek yogurt (for a lighter version).
- Ginger syrup: Gives a subtle sweetness and a bit of a kick from the ginger. This syrup goes perfectly with curry. You can find it in the (Asian) supermarket.
Preparation

- Mix the curry, turmeric, mayonnaise, ginger syrup, and crème fraîche in a bowl.
- Peel the egg and cut it into cubes. Add it to the sauce together with the fried bacon and smoked chicken.
- Cut the crusts off the bread and top it with the chicken curry salad.
- Place a second slice on top and cut the sandwich into quarters.

Ingredients
- 2 tablespoons mayonnaise
- 2 tablespoons crème fraîche
- 1 teaspoon curry powder
- 1 teaspoon ground turmeric
- 1 tablespoon ginger syrup
- 1 egg, hard-boiled
- ½ pound smoked chicken, cubed
- 2 oz. bacon bits, fried until brown and crispy
- 6 slices white bread
All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can slect which type of amount you would like to see.
Instructions
- Mix the mayonnaise, crème fraîche, curry, and turmeric in a bowl. Stir in the ginger syrup.2 tablespoons mayonnaise, 2 tablespoons crème fraîche, 1 teaspoon curry powder, 1 teaspoon ground turmeric, 1 tablespoon ginger syrup
- Peel the hard-boiled egg and cut it into small cubes. Add the egg to the sauce.1 egg
- Add the smoked chicken cubes and fried bacon bits to the sauce. Mix everything well.½ pound smoked chicken, 2 oz. bacon bits
- Cut the crusts off the white bread.6 slices white bread
- Divide the chicken mixture over three slices of bread. Place the other slices on top and cut the sandwiches into quarters.
- Your sandwiches are ready! Serve them immediately and enjoy.
Notes
- Refrigerator: Wrap the sandwiches in plastic wrap and store them for one day.
