Easy Puff Pastry Frikandel Rolls
About ten years ago, hardly anyone knew what a frikandelbroodje was. Now? You'll find it in every Dutch supermarket and canteen. It's that perfect mix of savory and crispy: a frikandel sausage wrapped in puff pastry with a sweet and spicy curry sauce, baked golden and flaky.
At our house, the kids absolutely love them, and honestly… I do too. There's something so comforting about that warm puff pastry and rich curry filling. But they can be pricey in stores, especially when you realize how easy they are to make yourself. With just a few ingredients, they're out of the oven in 20 minutes. And yes - even frozen puff pastry works great. Just halve the frikandellen to make it fit and you're good to go.
What Do You Need?

- Puff pastry: Use one fresh sheet (about 20 x 12 inches /50 x 30 cm). Frozen puff pastry also works; use 10 small squares (4 x 4 inches / 10 x 10 cm) and halve the frikandellen.
- Frikandel sausages: Oven-ready Dutch frikandellen are ideal; pre-cooked and easy to bake. And if you can't get store-bought frikandellen, make them easily yourself!
- Curry sauce: Adds that sweet-spicy flavor typical for this Dutch snack. You can use bottled curry ketchup if needed.
- Egg: Lightly beaten, for a glossy golden crust.
How Do You Prepare This Homemade Frikandel Puff Pastry Snack

- Step 1: Cut the pastry into strips. Spread curry sauce in the center.

- Step 2: Place a frikandel on top.

- Step 3: Fold, seal with a fork, score the top.

- Step 4: Brush with egg. Bake until golden and crisp.
Top Tips
- No fresh puff pastry? Frozen works just fine - thaw it first.
- Brush with egg wash for that glossy bakery look.
- Use a sharp knife to score the pastry so steam can escape.
- Don't overfill with curry sauce; a thin layer is enough.
- You can also use ketchup or BBQ sauce for variation.
- For mini snacks, cut each roll in quarters before baking.
- Store-bought frikandellen work perfectly; no need to precook.

Ingredients
- ⅔ pound puff pastry, fresh (sheet about 20 x 12 inches) 50 x 30 centimeters))
- 2 tablespoons curry sauce
- 5 frikandellen, Preferably oven
- 1 egg, small , beaten
All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can select which type of amount you would like to see.
Instructions
- Preheat oven to 400 °F.
- Cut puff pastry into 5 equal strips along the short side.⅔ pound puff pastry
- Spread a thin line of curry sauce down the middle of each strip, leaving 2 centimeters clear at the top and bottom.2 tablespoons curry sauce
- Place a frikandel on each strip.5 frikandellen
- Fold the pastry over to enclose the sausage completely.
- Press edges with a fork to seal.
- Score diagonal lines on top with a sharp knife.
- Brush tops with beaten egg.1 egg
- Place on a baking tray lined with parchment paper.
- Bake for 20 minutes until golden brown and puffed.
- Cool slightly before serving.
Notes
- Add onions to the curry sauce and serve with mayonnaise for a "frikandel speciaal" version.
- Brush with sesame seeds for a bakery-style finish.
- Fridge: Store in an airtight container for up to 2 days.
- Freezer: Freeze before baking, then bake directly from frozen at 400 °F (200 °C) for 25 minutes.
- Reheat in the oven at 350 °F (180 °C) for 10 minutes to keep the pastry crispy.
