We used to go to the poffertjes stall in town and get a tray of fresh mini pancakes with confectioner's sugar and butter (which belongs to real poffertjes). So good. There was only one drawback. There was far too little on my plate.
So I decided to make them myself. In the traditional Dutch way, with buckwheat flour, but without yeast, to make it easy to prepare. And with this recipe and a it's surprisingly easy to make these delicious treats.
And best of all, you can customize them to your taste. Instead of butter and icing sugar, you can serve the poffertjes with fresh fruit and whipped cream. And if you go for a savory variant, these poffertjes with cheese are delicious.

What do you need for Dutch Mini Pancakes (Poffertjes)?

- Add the remaining milk while continuing to mix. Now add the melted butter to the batter.
- Heat the poffertjes pan until it is hot and grease it with butter with a brush. Fill the holes in the poffertjes pan with batter with a squeeze condiment bottle, a soup spoon, or a measuring cup. When the top becomes dry, turn the poffertjes.
- Let the poffertjes bake for another 2 minutes and remove from the pan.

- 1 tablespoon sugar

- 2 eggs, size L
- 2 cups Milk
- 3 tablespoons butter, melted
- 2 tablespoons butter, room temperature.

Instructions

- While mixing on medium, slowly pour in ⅓th of the milk. Mix until you have a smooth batter without lumps.2 cups Milk

- Heat the poffertjes pan until it is hot.
- Grease the cavities of the poffertjes pan with butter with a brush.2 tablespoons butter
- Now fill the holes with batter. This is convenient with a squeeze condiment bottle, a soup spoon, or a measuring cup.
- Bake the poffertjes until the top is set. Now turn them over.
- Fry the small pancakes for another 2 minutes and remove them from the pan.

- Reheat the poffertjes in the microwave.
- Melt some butter in a skillet and fry the poffertjes quickly.
- Place the poffertjes in an oven dish, cover with aluminum foil, and bake at 350 °F (ca. 177 °C) for 10 minutes or until warm.
