Sometimes a cookbook comes out, and you look at the title and content descriptions and think a gap in the market. Too good to share with Sam Stern is such a book. 130 smart single dishes where you eat a balanced diet every day, without having to keep food on. Two dishes consecutively with a main ingredient is cooked in several ways, so you get two individual dishes although they are very different the same basic ingredient.
The book has got a nice hard cover, large sheets and beautiful pictures. Furthermore, Sam describes the pantry, which is essential and which makes sure you can prepare all meals. And also there are tips for the purchase of products such as chicken, beef, pork and much more. So you can make two meals and also you know what to look for in terms of freshness and how to buy and save money. The book is divided into eight themes involving chicken, beef, pork, vegetables and fish, but also special ingredients such as lamb, fish and sweet treats.
And not only standard dishes are covered. Off course there are those recipes in this book, but you can also encounter a Rack of lamb, pork from the oven and filo pastry with duck, feta and spinach.
The recipes made me hungry and dare you to cook a delicious meal for yourself. A great book though.
Of course I had to find out myself if the recipes were indeed as good as the pictures were suggesting and so I made from one basic ingredient (rice) two delicious dishes. We loved both I can tell you.

Ingredients
Marinade
- 2 cloves garlic sliced very thin
- 1 teaspoon ground coriander
- 1 chilli thinly sliced
- 2 tablespoons dark soy sauce
- 2 tablespoons Mirin wine
- 2 teaspoons fine granulated sugar
- 1 teaspoon cornstarch
beef
- 200 gram Beef tenderloin steak
- 1 tablespoon oil
- 2 teaspoons sesame oil
- 1 shallot
- ¼ red chilli finely chopped
rice
- 150 grams basmati rice
- 300 ml cold water
sauce
- 2 tablespoons dark soy sauce
- 1 ½ teaspoon sugar
- splash lime juice
- dash sesame oil

Instructions
- Mix the ingredients for the marinade in a large bowl and stir until the sugar is well dissolved.
- Cut the steak into strips and let stand 30 minutes in the marinade to marinate.
- Heat 300 ml of water in a saucepan and cook the rice according to the description of the manufacturer.
- Drain and leave to rest with the lid on the pan.
- Stir the ingredients for the sauce together.
- In a large skillet heat the oil.
- Chop the shallot and stir-fry for 1-2 minutes.
- Add the sesame oil and the meat and fry until the meat is browned.
- Pour the sauce and the strained marinade and heat it for about 1 minute.
- Spoon half the rice on the plate and spoon the steak with sauce.
- Allow the other half of rice to cool to room temperature and stop in the refrigerator and keep it for the fried rice with egg and garlic broccoli.

Ingredients
- 1 small head broccoli
- dash sesame oil
- 2 tablespoons vegetable oil
- 2 cloves garlic crushed
- 2 tablespoons hoisin sauce
- 2 eggs size s
- 1 spring onion cut into thin rings
- 50 grams peas frozen
- 75 grams white rice * leftover from the recipe spicy fried beef
- 1 tablespoon dark soy sauce

Instructions
- Boil or steam your broccoli al dente in 4 to 5 minutes.
- Heat some sesame oil in the pan and fry the garlic for 30 seconds.
- Add the (drained) broccoli and hoisinsaus to the pan and stir fry for 2 to 3 minutes. Take the broccoli from the pan.
- Beat the eggs with the spring onions.
- Stir the peas into the pan, stir-fry for 3 minutes, then add the egg and rice while you stir with a fork so that the egg stays pretty loose.
- Add the broccoli to the dish and then pour some dark soy sauce on top and heat until everything is hot.
