Delicious Chewy Chocolate Coconut Bars Recipe
Do you also love those Bounty bars? Maybe you remember them from that commercial from the past, where you took a bite from the bar and immediately found yourself on a warm holiday island. Or at least you thought you were there, according to the creators of the add. It did impress me because I'm sharing this memory with you anyway.
But a regular Bounty bar has no less than 14 ingredients. There are quite a lot. And of course, for a bar that is made in a factory and has to keep for a while, some more ingredients are needed. And did you know that with five simple ingredients, you get a delicious bar, which also takes you to a deserted, warm island (and while I'm typing this it's freezing outside :-), then that's extra nice isn't it?). The first time I ate these bars, I knew I was sold on this tasty treat (and so was my whole family).
Easy and Tasty
For this easy recipe, quickly mix the ingredients, press them into the baking tin, and bake them for twenty minutes until tender and firm. Let them cool down, and you can cut and eat them (or keep them, which I can't do).
I'm going to put another portion in the oven. Not only does it get wonderfully warm here (it's delightful to have such a large oven), but it also tastes and smells lovely. Have a pleasant (dream away) holiday with your coconut dream bars!
What do you need for DIY Chocolate and Coconut Bars?
You require the following ingredients to prepare these Chewy Chocolate Coconut Bars Recipe. You can find the correct amounts in the recipe card at the bottom of the blog.
- Coconut: For this recipe, you use ground coconut. It is the dried coconut flesh that is grated.
- Sugar: Gives the bars a delicious sweetness.
- Butter: Provides a creamy taste in the coconut bars with chocolate.
- Eggs: Binds all the ingredients together to get a solid bar that doesn't fall apart.
- Dark chocolate: My preference for these bars is dark chocolate. But you can also use semisweet chocolate chips or milk chocolate. The taste will then become softer.

- Grease a baking tin with oil and cover with baking paper.
- Mix the coconut, sugar, butter, eggs, and chocolate chips in a medium mixing bowl with a wooden spoon. It's that easy; you don't even need an electric mixer.
- Scoop the contents of the bowl into the baking dish and press down with the back of a spoon, so you get a single layer.
- Slide the baking tin into a preheated oven at 350 °F (ca. 177 °C) and bake for 20 minutes until golden brown and done. Remove from the oven, let cool for 5 minutes, and remove the chewy coconut bars from the tin. Let cool further on a rack and cut into the desired shape.
Tips, Substitutions, and Variations
- Fruity twist: Add chopped dried fruits such as cranberries, apricots, or pecans to the melted chocolate (about three tablespoons).
- Nutty good: Chop almonds, hazelnuts, walnuts, or pecans (or a mix of these) into the batter. Three tablespoons is enough.
- Gluten-free: This recipe is gluten-free, but always check the ingredients carefully.
- Cookie bar: Crush 1 cup of graham crackers in the food processor and mix with ½ stick of melted butter. Put the graham cracker crumbs mix on the bottom of the dish for a cookie bottom.
- Caramel: Instead of white sugar, use brown sugar. This got some extra flavor and caramelized when baked.

- 2½ cups shredded coconut
- ¾ cup sugar
- 1 stick butter unsalted, melted and slightly cooled
- 2 eggs size L
- 1 cup dark chocolate chips

Instructions
- Heat oven to 350 °F or 320 °F
- Brush a square pan (10 × 10 inches (24 × 24 cm)) with butter and line with baking paper.
- Take a large bowl and add all the ingredients.2½ cups shredded coconut, ¾ cup sugar, 1 stick butter, 2 eggs, 1 cup dark chocolate chips
- Mix everything through with a spatula.
- Put the batter in the baking pan and flatten the top with the back of a spoon
- Put the tin in the oven and bake for 20 minutes until it's firm.
- Take it out of the oven, let it stand for 5 minutes, and remove it from the tin.
- Let it cool on a rack to room temperature.
- Cut this into a bar form.

These were delicious thank you , however they did not turn out cruncy and were very soft, any ideas why?

Hi, I've made these several times and they were crunchy all the times. Maybe you did something different (and I would love to know so I can make this recipe as foolproof as possible). Did you weigh all the ingredients? And did you use dark chocolate (cocoa >50 %), otherwise there could be to much fat in the chocolate. And did you use a conventional or convection oven. Let me know, and I'll try to find the answer.
