If you go for easy, you run to the supermarket and buy a jar of chicken curry salad with a little bit of chicken, some pineapple and apple and a lot of sauce. But if you want easy and also tasty, you can make this chicken curry salad yourself. Because this recipe is so easy and quick to prepare, the trip to the store almost takes longer.
And the full creamy taste of the slightly sweet curry flavor sauce, which coats every bit of chicken, is a delicious surprise. This bowl is always completely empty afterward. Whether you eat it on a sandwich for lunch or as a spread at a party. This is so delicious that I always come up short (and I often make a lot extra). Try it yourself soon!
What do you need for a creamy salad with curry and chicken
For the preparation of this curry chicken salad you need the following ingredients (you can find the correct amounts in the recipe card at the bottom of the blog):

- Chicken - Use cooked chicken as proteïn, which you poach in stock (to give it even more flavor). Chicken breast or chicken tenderloin lends itself well to this. Cut it into cubes for even more flavor.
- Mayonnaise and Sour cream - Make the sauce rich and creamy.
- Lemon Juice - Use Fresh Juice!
- Ginger Syrup - For a hint of sweetness and a touch of ginger. Because ginger is one of the best flavor combinations with curry.
- Spices - Nothing special. You probably already have curry powder, turmeric, garlic, pepper and salt in your kitchen cupboard.
How to make Curry-Chicken Salad

- Pulled Chicken - Place the chicken in the bowl and pull it apart with two forks. This way you can distribute the chicken evenly in the salad.
- Basic sauce - Make the basic sauce by mixing the mayonnaise with Sour Cream. This is really my favorite base for many sauces for a salad.
- Flavor - Season the sauce further by adding spices, ginger syrup and lemon juice. In this case curry powder, turmeric, a pinch of white pepper, garlic and salt.
- Stirring - Mix everything together well. I usually leave it in the fridge for another hour, so that the flavors blend even better. But you could (if your guests are waiting) serve it right away.
To serve!
- On a sandwich - Delicious on a croissant, baguette, or Italian bun. Even between two slices of bread, it instantly makes your lunch very, very special.

Instructions
- Place the chicken in a bowl and pull the meat apart with two forks until you have pulled the chicken.¼ pound chicken

- Make in advance / Refrigerator - You can keep this salad in the refrigerator covered for 2 days, so you can make it very well in advance.
- Freezer - While you can theoretically freeze the chicken salad, the texture will likely change in a way that makes it less tasty. So try to eat it before that.
