Strawberry Ice Cream Soda
Ice cream soda is a dessert (or treat) invented around 1870 in America by Otto Baur. And it became a crowd favorite in all the English-speaking countries around the world.
It’s a delicious treat in summer because this strawberry ice cream float is refreshing, and it’s really easy to prepare. And besides that, it’s a very versatile recipe. You can vary all you want when you’ve got the basic recipe!
And by adding soda to the ice cream, you’ll get a sweet foam layer, which looks like a spider web. And that’s probably one of the reasons people in Australia and New Zealand call this delicious dessert spider.
What do you need for Soda Ice Cream with Strawberries?
To prepare this Strawberry Ice Cream Soda, you need the following ingredients. You can find the correct amounts in the recipe card at the bottom of the blog:
- Strawberries - Use fresh strawberries if you can get them. Strawberries are best in late spring and summer.
- Strawberry syrup - Use homemade or store-bought strawberry syrup. You can use sugarless or with sugar, which one you prefer.
- Lime Soda - Sparkling water with a lime flavor, like 7up and Sprite.
- Vanilla Ice cream - creamy ice cream with a vanilla flavor.
How to prepare this Strawberry Ice Cream Soda Float

- Slice the strawberries into small cubes and divide them over the glasses. Pour some strawberry syrup on top.
- Add three tablespoons of vanilla ice cream to each glass.
- Pour Lime soda on top. You may have to stop in between because the strawberry ice cream soda will start to foam, and the glass could overflow.
- Add mint leave and straw into the glass and serve.
Other variations
- Chocolate Ice Cream Soda Float - Pour some chocolate syrup into a glass and add chocolate ice cream. Next, pour in some club soda. Finally, top it with whipped cream and a strawberry.
- Fruit Ice Cream Soda - You can swap out the strawberries with other summer fruit like raspberries, blueberries, or red currants.
- Orange Ice Cream Soda Float - Add some vanilla ice cream to a large glass and pour orange soda on top of the ice cream.

Ingredients
- 1½ cup strawberries
- 4 tablespoons strawberry syrup
- 1 cup vanilla ice cream
- 2 cups 7up or sprite

Instructions
- Wash the strawberries and hull them. Slice them into small pieces.1½ cup strawberries
- Place the strawberries at the bottom of the tall glasses.
- Pour into each glass 1 tablespoon strawberry syrup.4 tablespoons strawberry syrup
- Scoop ¼ cup of vanilla ice cream into each glass.1 cup vanilla ice cream
- Add Lemon soda (7up or Sprite) to the glass. It will start to foam, so you probably have to stop in between. Otherwise, this dessert will overflow!2 cups 7up
- Insert a straw in and serve!
