This spicy blue cheese salad takes a few steps - but I'm convinced they're worth it! The salad is made with blue cheese, oranges, and caramelized spicy walnuts. A salad which is delicious on any occasion! The salad is flavored with an easy dressing, which is made in just a minute.
A spicy blue cheese salad with nuts and a fresh citrus flavor. A bit spicy and extra flavor because of the addition of blue cheese. This salad contains so many flavors, you might think it would be overwhelming.
But this winter power food is a real winner. The flavors complement each other nicely and the salad is one of those healthy recipes that are deliciously fresh and contains a lot of vitamins. Just what we need in these cold and gray days.
- Walnuts, olive oil, sugar, chili pepper, and salt. With these ingredients, you prepare the spicy caramelized walnuts. It sounds like a lot of ingredients, but it's a really simple recipe. You can substitute it with pecans or almonds. And if you want to make it even spicier add more chili pepper.
- Mosterd, olive oil, salt, and pepper. These ingredients are used for the dressing. The sharp flavor of the mustard contrasts with the fresh orange, spicy walnuts, and strong-flavored blue cheese.
- Mixed lettuce. I used for this orange a mixed salad. Because of all the red and green colors. But also because the salad contains a lot of flavors, don't use a predominant lettuce type (such as arugula) is less suitable for this.
- Orange. Parts of oranges are used for the salad, without membranes. And when you get a piece of orange in your mouth you get a delicious taste explosion in your mouth.
- Blue cheese. The blue cheese is firm and spicy, but in combination with the fresh orange and spicy walnuts, the perfect counterpart in this salad. I use a Blue Stilton in this salad, but of course another blue cheese, you can use Gorgonzola or Roquefort.
🔪 How do you prepare a spicy blue cheese salad?
Step 1 Caramelize the walnuts. Preheat the oven to 350 degrees Fahrenheit (or 180 degrees Celsius) Mix the walnuts in a bowl with sugar, chili powder, salt, and 1 teaspoon olive oil. Spread the walnuts on a baking plate (so you'll get an even layer) and bake it in the oven for 10 minutes. Get them out and let them cool.
Stap 2 parts and juice from an orange. Peel the oranges with a knife. Cut parts between the membranes. Take the remaining orange and squeeze out the juice over a bowl. Set it aside for a while so we can use it in the blue cheese salad later.
Step 3 prepare the mustard dressing. Mix the olive oil, orange juice, and mustard.
Step 4 assemble the spicy blue cheese salad. Put the mixed lettuce in a bowl. Crumble blue cheese above the salad. Add the orange parts and dressing to the salad. Mix everything. Then spread the caramelized walnuts on top. And this healthy recipe is done!
- Do you want some extra spice? Add ½ teaspoon of chili pepper.
- Do you want a less sharp mustard flavor, add 1 tablespoon sour cream to the dressing.
- You can substitute orange with grapefruit.
- If you want a low-carb recipe, don't use walnuts in your salad.

- You can replace the walnuts with pecan nuts or almonds. The blue cheese can be substituted with Gorgonzola or Roquefort.
- The walnuts can be caramelized 2 days in advance. Store in an airtight container at room temperature.
- You can slice the orange parts and juice them one day in advance. Store in an airtight container in the refrigerator.
- When you've assembled the salad you can't store it anymore. So eat it right away.

- 100 grams mixed green salad
- 1 orange
- 2 teaspoons mustard
- 5 tablespoons olive oil
- salt and pepper at taste
- 55 grams blue cheese
- 50 grams walnuts chopped
- 1 teaspoon olive oil
- ½ teaspoon sugar
- ¼ teaspoon red chili pepper
- ¼ teaspoon salt

Instructions
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
- Mix the walnuts with sugar, chili, salt, and 1 teaspoon of olive oil.
- Spread them out on a baking sheet and leave them for about 10 minutes in the oven until crispy.
- Peel the orange and cut orange wedges above a bowl with a sharp knife. Collect the juice in the bowl.
- Mix juice with the mustard, 5 tablespoons of olive oil, and some salt and pepper.
- Put the lettuce in a bowl, crumble the Danish Blue and orange segments on top.
- Sprinkle the dressing over the salad and toss well.
- Serve immediately to show off everything as fresh as possible.
