Puff Pastry Breakfast Tarts With Egg And Bacon
Sunday mornings carry their own quiet sparkle here. Three sleepy boys drift into the kitchen, my husband pours the first coffees, and the cat weaves around our feet while the chickens mutter outside. The smell that follows is the best part: warm butter, gentle leek, and savory bacon calling everyone to the table.
The first bite always lands with a little crunch from the flaky edges. Next comes the soft leek, sweet and mellow, and then the salty hit of bacon. The yolk ties it all together like a silky sauce, so each mouthful feels rich without being heavy. Plates slow down, chatter softens, and someone inevitably steals "just one more" corner. Small moments, big comfort: that's undoubtedly why these tarts keep coming back.
What You'll Need
You can find the exact amounts in the recipe card below.

- Puff pastry: Use 6-7 ounces of thawed e and cut it into four neat squares; the borders puff into buttery, crisp frames that hold the fillings.
- Butter: A small knob softens the leeks and adds rich flavor without weighing the tart down.
- Leek: One medium leek, thoroughly washed and sliced thin; the mild sweetness pairs beautifully with bacon and eggs.
- Bacon: Four slices supply salt and crunch; cook until just crisp so they finish perfectly in the oven.
- Eggs: One small egg per tart sets softly in the center; bake to your preferred doneness.
- Seasoning: A light pinch of salt and black pepper balances the richness without overpowering the delicate leek.
- Optional finish: A sprinkle of dried herbs or a little shredded cheese gives a bistro touch right before serving.
How To Make It
You can find the full step-by-step instructions in the recipe card below.

- Step 1: Cut the pastry into four 5×5-inch (12-13 cm) squares, fold a ½-inch (1.5 cm) border, and dock the centers. Blind-bake for 10 minutes.

- Step 2: Crisp the bacon, then in the same skillet soften the sliced leeks in butter for 5 minutes.

- Step 3: Press down pastry centers, add leeks and bacon.

- Step 4: Crack in an egg, season lightly, and bake at 400 °C (220 °C) 12-15 minutes until the whites set and the yolks are as you like.
Top Tips
- When cleaning, rinse the leeks between the layers; grit hides well.
- Keep borders tidy so the pastry rises evenly.
- Check at 12 minutes for runny yolks; extend to 15-16 minutes for firmer centers.
