Whenever I make this bruschetta, I’m reminded of how a few simple ingredients can create something amazing. The first time I served it at a summer gathering, it was gone in minutes! The fresh strawberries add sweetness, the balsamic glaze gives it a tangy kick, and the mascarpone ties it all together with a creamy touch.
It’s my go-to recipe when I want something that looks special but is super easy to prepare. The bright colors of the strawberries and basil make it look as good as it tastes, and everyone always asks for the recipe.

What is Balsamic Glaze?
Balsamic glaze is balsamic vinegar reduced into a syrup. It’s velvety and has a softer, fuller taste. For a creamier flavor, use balsamic glaze instead of regular balsamic vinegar. If you like a sharper tang, go with regular balsamic vinegar.
Strawberry Tip
Use fresh, ripe strawberries for the best flavor. They’re usually sweetest in late spring and summer. Out-of-season strawberries may taste watery, so try to find the freshest ones.
What’s the Best Substitute for Mascarpone?
If you don’t have mascarpone, cream cheese is a good alternative. Add a little honey to mimic the mascarpone’s mild sweetness.
Preparation in 4 Steps

- Step 1: Slice a baguette into 10 pieces. Heat a grill pan and toast each slice on both sides until golden brown. Spread mascarpone on each slice.

- Step 2: Halve the strawberries and place them on top of the mascarpone.

Ingredients
- 1 baguette
- ½ cup mascarpone
- ½ cup strawberries, washed and hulled
- 2 tablespoons balsamic glaze
- ⅓ oz fresh basil, leaves

Instructions
- Slice the baguette into 10 pieces to make bruschetta.1 baguette
- Grill the slices on both sides until golden brown.
- Spread a layer of mascarpone on each grilled slice.½ cup mascarpone
- Cut the strawberries in half. Place the strawberry halves on top of the mascarpone.½ cup strawberries
