I always look for an easy casserole to put in the oven quickly. It should be ideal for busy evenings and also a bit healthy. Now, that exactly sums up this Potato Casserole with Chicken and Broccoli.
This casserole's taste is savory and rich. The bacon gives it a salty, smoky flavor, the chicken a tender bite, and the broccoli a fresh, slightly sweet touch. The potato slices are soft and creamy and, combined with the cheese, the perfect crispy top layer.

- A conventional oven is used. When using a convection oven (with air fan) decrease the temperature with 30 °F / 20 °C
Ingredients
- 1 ¼ pound potatoes , floury
- 2 pounds broccoli , only florets
- 4 oz. bacon bits
- ¾ pound chicken breast, cut into cubes 1 x 1 inch (2 x 2 cm)
- ¾ cup Gouda cheese

Instructions
- Preheat the oven to 430 °F or 390 °F.
- Peel the potatoes and boil them for 20 minutes in lightly salted water until done. Allow to cool.1 ¼ pound potatoes
- Meanwhile, cook the broccoli until they still have a bite, about 7 to 8 minutes.2 pounds broccoli
- Fry the bacon in a skillet until lightly crisp and remove it with a slotted spoon and put it on a kitchen towel4 oz. bacon bits
- In the same skillet you baked the bacon, add the chicken and bake until golden brown.¾ pound chicken breast
- Turn off the heat and mix the bacon and broccoli with the chicken.
- Cut the potato into ½ inch thick slices.
- Cover the casserole dish with half of the potatoes.
- Then, place the broccoli-chicken mixture on top and cover with the remaining potatoes.
- Sprinkle with grated cheese and bake for 25 minutes until golden brown in the oven.¾ cup Gouda cheese
Notes
- Refrigerator: This chicken broccoli casserole can be kept covered in the fridge for two days. This makes it easy to prepare.
- Freezer: You can freeze this casserole in an airtight container. It will then remain good for up to 3 months. Thaw in the refrigerator in the morning.
- Reheat: Cover the oven dish with aluminum foil. Heat the dish in the oven at 350 °F (180 °C) for 20 minutes. Check whether it is sufficiently warm. If not, increase the oven time by 5 minutes and check again.
