When we were having such a busy evening peak in the house recently (school, sports, work, and other activities), it was time to pull out an easy recipe.
This one-pot pasta with cherry tomatoes and tuna is exactly the recipe I was looking for. The creamy pasta, juicy tomatoes, and delicious tuna were a top combination. Cooking in broth gave everything even more flavor. And the sour cream made for a creamy and silky pasta dish.

What do you need for Tuna Tomato and Caper One Pan Pasta?
You require the following ingredients to prepare this 30-minute One Pot Tuna and Tomato Pasta. You can find the correct amounts in the recipe card at the bottom of the blog:
- Pasta: I use Penne, elongated hollow pasta tubes cut at an angle. In this dish, you can replace it with another coarse pasta such as tagliatelle or fusilli.
- Tuna: Use canned tuna. You can buy this stored in olive oil, sunflower oil, or water. The end result doesn't matter much, but tuna in water is slightly slimmer.
- Olive oil: For frying.
- Cherry tomatoes: Buy the tastiest cherry tomatoes you can get. They have a lot of flavor, and stewing makes them even better. And because it is a seasoning (and eye-catcher) of this recipe, this is highly recommended.
- Red onion and garlic: Seasonings in this recipe. Use a red onion because that has a slightly less sharp taste than regular onions.
- Capers: These deep green small balls are fresh, peppery, and spicy. They are the unopened flower buds of the caper plant.
- Parsley: Gives a fresh accent to the pasta dish.
- Parmesan cheese: A delicious salty cheese from Italian cuisine that melts wonderfully.
- Stock: Use vegetable stock. This gives this one-pot pasta recipe extra flavor. Make vegetable broth from scratch or use a cube.
- Sour cream: This is a thick, slightly acidified cream. It gives a full creamy flavor.

- Put the pasta and ⅔ of the halved tomatoes in the pan and pour in the stock. Bring everything to a boil. Lower the heat and simmer uncovered for 15 minutes. Toss regularly.
- Then add the rest of the tomatoes and stir in the sour cream, Parmesan cheese, capers, and parsley. Cook for 5 minutes until the liquid has reduced. Taste and season with salt and pepper.
- Finally, add the tuna and stir gently. Turn off the heat and serve immediately.
Garnish with additional fresh parsley and freshly grated cheese.
Tips, Substitutions, and Variations
- Tasty: Add some extra basil for an Italian twist.
- More vegetables: Add a handful of spinach to the sour cream sauce.

- 1 pound cherry tomatoes halved
- ¾ pound canned tuna
- 2 tablespoons capers drained and rinsed
- ½ oz. Fresh Parsley finely chopped
- ½ cup sour cream
- Salt and pepper to taste.

- Pour the olive oil into the pan and add the onion. Cook for 3 minutes until translucent. Then add the garlic and stir-fry for 30 seconds.2 tablespoons olive oil, 1 red onion, 2 cloves garlic

Notes
- Refrigerator: Store, covered, in the fridge for up to 2 days.
- Freezer: Because you have added sour cream, it is better not to freeze this.
- Reheat: Add two tablespoons of water and heat over medium heat in a skillet while stirring. Heat until hot.
