Creamy Garlic Mushroom Pasta
Because it's always busy in the house with a lot of appointments (I suspect that's part of a family of five), I like quick and easy dishes. And this vegetarian pasta is currently on my list of great weeknight recipes to fall back on. It is budget-friendly, simple, and quick to make.
The creamy, rich, velvety sauce is full of flavor. The spicy garlic mushrooms are irresistibly delicious. Served with pasta of your choice, a nice salad and possibly some bread, you don't need much more. Try it yourself!
What do you need for Creamy Mushroom Pasta?
To prepare this Creamy Garlic Mushroom Pasta, you need the following ingredients. You can find the correct amounts in the recipe card at the bottom of the blog:
- Pasta - All types of pasta will go well with the mushroom cream sauce, but linguine, spaghetti, or tagliatelle is the best. Because the sauce then completely wraps around the strings of pasta.
- Mushroom mix - I had a delicious mushroom mix in the vegetable drawer. But you can use white or brown mushrooms for this recipe. The latter is a bit firmer and has a nutty taste.
- Butter - For a creamy taste.
- Shallot and garlic - The seasonings. They ensure that the mushrooms are lifted to a higher level.
- Cream - To give the sauce a creamy taste. You can also use sour cream.
- Stock - I opted for vegetable stock (it's a vegetarian recipe, after all). That you can make quickly, and it is the ideal way of processing leftovers. Here's a delicious recipe for homemade vegetable stock. If you don't have vegetable stock, you can also use beef or mushroom stock (the recipe is no longer vegetarian).
- Flour - To slightly thicken the sauce. Fry the flour for at least 2 minutes to get no flour taste.
- Parsley - For a fresh accent
- Cheese - Sprinkle this dish with delicious cheese. A Parmesan, Pecorino, or an Old-aged cheese is delicious.

- Add parsley and serve with the spaghetti.
You can serve it side by side or mix the sauce with the pasta. Sprinkle with freshly grated cheese.
Delicious with a green salad, garlic bread, or freshly baked focaccia.
Tips, Substitutions, and Variations
- Cooking Spaghetti - Add two teaspoons of salt to the water in which you will cook the pasta.
- Extra vegetables - Add 1 pound (400 grams) of spinach to the sauce and let it simmer until it has shrunk.
- Pasta water - Instead of stock, you can also use salted pasta water (leftover from draining the spaghetti).
- Mushrooms - super tasty, but still some tips:
- Don't stir too much, and make sure you don't put too many mushrooms in the pan at once. Then they become slimy in taste.
- How do you clean mushrooms? First, wipe them clean with a paper towel if they are dirty. Do not use water. The mushrooms absorb the water like a sponge, and you end up with watery mushrooms (and you don't want that).
- Do not slice the mushrooms too thin, as they will not hold their shape and will shrivel in the pan.
- Nice and fresh - Add a teaspoon of lemon zest to the cream sauce.
- Meat - You can add (leftover) meat to this pasta recipe. Think of chicken (cooked beforehand) or fried bacon.
