Creamy Cottage Cheese Veggie Skillet
You know those evenings when everyone's hungry, and you just want to throw something together that feels like a proper meal? That's when this cauliflower rice skillet shows up at my house.
It started on a lazy weeknight. The fridge looked empty- just a leek, some spinach, and a few eggs staring back at me. I melted a bit of butter, tossed it all together, and added cottage cheese on top. Dinner was ready before I had time to think about takeout.
The smell of buttery leek and warm cauliflower rice fills the kitchen - it's the kind of scent that makes everyone wander in asking, "What's for dinner?" When the eggs set and the cottage cheese melts just a little, it looks and tastes like something special, even though it's so simple.
We often eat it straight from the pan at the table, spoons clinking and everyone adding their own twist of pepper. It's easy, comforting, and one of those meals that disappears before you know it.

- 1 tablespoon butter
- 1 cup leek
- 1¼ cup spinach , thawed or 6 cups fresh spinach
- 4 cups cauliflower rice
- salt and pepper, to taste
- 2 eggs , size M
- 1 cup cottage cheese

Instructions
- Melt the butter in a large wok or pan.1 tablespoon butter
- Add the leek and fry for 2 minutes until soft.1 cup leek

Notes
