German Fried Potatoes with Bacon and Onion
This is a recipe from my childhood. Throwing any food away was out of the question, and if there were potatoes left over, they were fried in the skillet the next day (and I know that my mother even cooked more to make boiled potatoes once and fried potatoes the next day). And the skillet-fried potatoes I was always looking forward to. Crunchy on the outside and wonderfully soft on the inside. Fried in butter, so creamy.
And I do the same. If I have leftover potatoes, I let them cool quickly and store them covered in the fridge until the next day. And then, I cut them into slices and fry them. And today, I'm sharing my favorite fried potato recipe with bacon bits, caramelized onions, and finely chopped rosemary. Enjoy in advance!
What do you need for Fried Potatoes with Bacon and Onions?
To prepare these German Fried Potatoes, you require the following ingredients. You can find the correct amounts in the recipe card at the bottom of the blog:
- Potatoes: Use floury potatoes to make this recipe. Russet, Doré, King Edward, and Maris Piper are great choices.
- Butter and Oil: Fry the potatoes in a butter and oil mixture. This way, you can make the fats hot without burning the butter (and you still have that delicious taste).
- Onion: This allows you to vary. Use a 'regular' yellow onion, a slightly softer red onion, or a spicy shallot.
- Bacon bits: Crispy fried, they give a salty taste to the potato dish.
- Rosemary: Has a bittersweet taste (and smells great).
How to prepare Pan Fried Potatoes with Bacon (Bratkartoffeln)

- Boil the potatoes until done and let cool. Cut into slices.
- Put oil and butter in the pan and let the butter melt. Fry the bacon in this for a minute.
- Then add the onions and fry for 2 minutes.
- Add the potato slices to the pan and fry until golden brown and crispy, about 15 minutes. Sprinkle with finely chopped rosemary and season with salt and pepper.
This is delicious with chicken in vanilla sauce, red cabbage with apples, and Brussels sprouts with bacon and whiskey.

- Potatoes: You can cook the potatoes a day before and let them cool. Then store them covered in the refrigerator. Tip cook the potatoes for two days at a time. The first time you eat boiled potatoes with gravy. You can fry the remaining potatoes the next day.
- You can also use pre-cooked potatoes from the supermarket.
- Rosemary: Can also be replaced with thyme, oregano, and fresh parsley.
- Extra flavor: Add a clove of garlic. Or sprinkle the potatoes with grated cheese after frying. The heat melts it over the potatoes.
- Vegetarian: For a tasty vegetarian option, you can replace the bacon with grilled vegetables, such as peppers or zucchini, or strips of sun-dried tomatoes.
