Ham Pesto Grilled Cheese Sandwich
This recipe shows you why a few small choices make such a big difference. Homemade pesto gives the sandwich a fresher, fuller flavor than most store-bought versions. Gouda melts beautifully and has more flavor compared to mozzarella, which can be a bit too mild next to pesto.
Frying the ham first gives it more roasted flavor, and toasted pine nuts add the little crunch that makes the whole sandwich feel finished instead of flat.
What makes this sandwich stand out is that it does not try too hard. It is not fancy and it doesn't need lots of extras. It is just a very good warm sandwich with a subtle Dutch touch, where every layer brings something: creamy cheese, fresh pesto, browned ham, crisp bread, and that nutty crunch on top. That is what makes it so good for lunch at home.
What You'll Need
Exact amounts are in the recipe card below.

- Bread: The base of the sandwich. Use sturdy bread that toasts nicely. Tip: Sourdough or corn bread are both delicious here.
- Fresh basil: This gives the pesto its fresh, green flavor.
- Parmesan cheese: Adds saltiness and depth to the pesto. Tip: Pecorino also works if you want a slightly sharper taste.
- Pine nuts: Some go into the pesto and some on top for crunch. Tip: Toast them lightly until they smell nutty.
- Garlic: Gives the pesto a warm, savory kick.
- Olive oil: Helps turn the pesto smooth and spreadable. Tip: Add it little by little so the pesto does not get too thin.
- Gouda cheese: Melts beautifully and gives a creamy, full flavor. Tip: Regular Gouda is perfect here.
- Ham: Adds a salty, savory layer. Tip: Brown it first in the pan for more flavor.
How to Make It
You'll find the full, step-by-step recipe card below.

- Step 1: Brown the ham and toast the pine nuts in a frying pan on low heat. Set aside.

- Step 2: Make the pesto by blending basil, Parmesan, pine nuts, garlic, and olive oil until smooth.

- Step 3: Build the sandwich with bread, pesto, ham, Gouda cheese and toasted pine nuts.

- Step 4: Grill under the broiler, or fry in a frying pan until the bread is golden and the cheese is melted.
Top Tips
- What is the best cheese for pesto grilled cheese? Gouda is a great choice because it melts well and still has enough flavor next to the pesto. Provolone and Swiss are common in other recipes, but Gouda gives this sandwich a softer, creamier bite.
- Does pesto grilled cheese need mozzarella? No. Mozzarella is fine, but it is not used here. Gouda has more flavor, so it is better combined with the pesto.
- What bread is best for pesto grilled cheese? Choose bread that gets crisp on the outside and stays sturdy inside. Regular sandwich bread, sourdough, or corn bread all work well.
- Can I make pesto grilled cheese in a sandwich maker? Yes. You can use a sandwich maker, grill pan, skillet or the broiler.
- Why toast the pine nuts first? Toasting brings out their nutty flavor and makes them crunchier. That little crunch is one of the best parts of this sandwich.
- Can I use store-bought pesto instead of homemade? Yes, you can. But homemade pesto gives the best flavor in a simple recipe like this one.
- How do I keep pesto grilled cheese crispy? Do not use too much pesto, use bread that grills well, and serve the sandwich right away while the bread is still hot and crisp.
