Easy Madras Curry Powder Recipe
A delicious curry starts with the right spices. The combination of warm spices such as cinnamon and cloves, fresh fennel and coriander, and a little heat from chili and mustard seeds makes this mix delicious. By mixing your spices, you determine the taste, and you know exactly what is in it.
What do you need?

- Coriander seeds & cumin: Give a fresh, earthy base.

Ingredients
- 4 teaspoons ground coriander
- 3 teaspoons ground cumin
- 2 teaspoons ground white pepper
- 1 teaspoon ground black pepper
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons ground turmeric
- 1 teaspoon chili powder
- 1 teaspoon dry mustard
- 1 teaspoon ground fennel seeds
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cardamom
- 1 teaspoon ground cloves

Instructions
- Put all the spices in a bowl.4 teaspoons ground coriander, 3 teaspoons ground cumin, 2 teaspoons ground white pepper, 1 teaspoon ground black pepper, 2 teaspoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground turmeric, 1 teaspoon chili powder, 1 teaspoon dry mustard, 1 teaspoon ground fennel seeds, 1 teaspoon ground nutmeg, 1 teaspoon ground cardamom, 1 teaspoon ground cloves
- Mix well until you have a smooth spice mix.
- Store in a sealed jar, such as a clean jam jar.
- Use the mix to give dishes extra flavor.
Notes
Dry and dark in a kitchen cupboard. The mix will be kept in a sealed jar for 3–6 months.
