Lemon Almond Puff Pastry Cookies

When they come out of the oven, they smell amazing. Fresh and lemony. The puff pastry is golden and flaky, and the sugar and almonds make a nice crunchy topping. This recipe always works. Even if you don't bake often.
Baking Together
When my kids were little, we often baked cookies together. There is always puff pastry in our freezer. It's great for all kinds of things: snacks, apple turnovers, cheese sticks-and now, these lemon cookies.
Everyone could help. One cut the pastry, one brushed the lemon mix, and together we added the sugar and almonds. Baking on a Wednesday afternoon was just as fun as eating the cookies.
These cookies are a family favorite. And be careful-once you eat one, you'll want more!
Serve them with a cold glass of lemon-ginger lemonade.

RECIPE CARD
Ingredients
- 5 sheets puff pastry, 4 x 4 inch (10 x 10 cm), frozen
- 2 lemons, zest
- 1 egg, beaten, size L
- 2 tablespoons sugar
- 2 tablespoons Almond slivers, finely chopped
All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can select which type of amount you would like to see.
Instructions
- Preheat the oven to 430 ℉.
- Put baking paper on a baking tray.
- Cut each sheet of puff pastry into 4 small squares. Place the squares on the tray.5 sheets puff pastry
- Mix the lemon zest with the beaten egg in a small bowl.2 lemons, 1 egg
- Use a brush to spread the lemon-egg mix on each square.
- Sprinkle sugar and chopped almonds on top.2 tablespoons sugar, 2 tablespoons Almond slivers
- Bake for about 12 minutes until golden brown.
- Let the cookies cool on the tray for 5 minutes. Then move them to a wire rack to cool completely.
