Mix the roasted vegetables with the other ingredients and fill a wrap. You then au gratin them in the oven so that you get a delicious crispy crust.
Today a delicious and budget-friendly recipe for tortilla wraps. The rice with carrot and ham and broccoli filling is delicious. And to make it even better, I've come up with a delicious twist. Before we use the vegetables in the filling we roast the broccoli, carrots, and onion so that they get more flavor.
And you serve it in wraps that you sprinkle with grated cheese and let it gratin in the oven.
Even more budget-friendly?
A tasty dish for a few bucks. And do you want to save even more? Then replace the ham with a sliced omelet and mix that through the vegetables. Or you can omit the wraps and cook some extra rice.
And do you have leftover rice? Then fry it the next day in a frying pan with some oil. Because there is nothing better than a lunch with fried rice.
Easy dinner recipe
This is such an easy recipe and you can prepare it in advance. Make everything in the morning or even the day before. Store it, covered with foil, in the refrigerator until you're ready to bake.
Just before baking, you add the grated cheese. Bake for 5 minutes extra (so a total of 20 minutes), so the rice with carrot and ham filling will warm up to. A great recipe for those busy weeknights.
- Rice. The amount subscribed is uncooked. And of course, you can vary in sorts of rice. I use white rice, but you can also use basmati rice if you like the flavor. Or take brown rice to add extra fiber. Cook the rice according to the manufacturer's instructions.
- Carrot, broccoli, and onion. These vegetables go into the rice with carrot and ham mixture. These veggies are all roast-friendly and you bake them for the same time in the oven. You can substitute them with cabbage, pumpkin or Parsnip.
- Ham cubes. Easy and delicious are these ham cubes. And you can substitute them with cubes of smoked chicken. Or boil some chicken until done and cut them into small pieces. And ground beef, baked in a frying pan until done, is also a great substitute.
- Chili powder. To spice up the filling. You can vary in the amount you add. This amount is very suitable when eating with small children.
- Olive oil. You use it for roasting the vegetables in the oven. You can also use another oil like sunflower oil.
- Tortilla wraps. Warm the tortillas for a few seconds on both sides so they are a bit warm. Then you can roll them better and you won't tear them apart. You can choose for whole wheat tortillas or a carrot or beet tortilla.
- Cheese. Use a cheese which you can gratin, like Gouda cheese.
🔪 How to prepare rice with carrot and ham?
Step 1: Roast the vegetables in the oven. Preheat the oven to 390 degrees Fahrenheit (200 degrees Celsius). Cube the carrots, slice the onion finely, and cut broccoli florets. Mix the vegetables with olive oil and spread them on a baking plate. Make sure you spread the vegetables so you get one layer (this way it will cook more evenly). Bake for 15 minutes (and stir once while baking).
In the meanwhile cook the rice. Use the manufacturer's description for the right amount of water and cooking time.
Step 2 Mix the rice with carrot and ham and broccoli. Stir the veggies and add the rice and ham cubes. Sprinkle the chili powder on top. And mix everything. This will be the tortilla wrap filling.
Heat the wraps for a few seconds in a dry frying pan (on both sides). Because they're warm you can roll and they won't break.
Step 3 Fill the wraps. Put a wrap in front of you. In the middle add some rice with carrot and ham and broccoli. Spread that. Roll the wrap and put it in a casserole dish. Repeat for all wraps.
Step 4: Sprinkle with grated cheese and bake in the oven. Sprinkle some grated cheese on top and bake for 15 minutes in the preheated oven at 390 degrees Fahrenheit (200 degrees Celsius).
Did you prepare the casserole dish in advance and stored it in the refrigerator in between? Extend the baking time by 5 minutes to 20 minutes, so the filling will be warm.

- Do you have some rice with carrot, broccoli, and ham filling left? Make more wraps or bake the rice for lunch the next day (fried rice is super delicious).
- You can store the unbaked casserole up to 2 days in the refrigerator. Make sure to cover them up and don't sprinkle the cheese on top. Just before baking add the cheese and bake the casserole for 20 minutes at 390 degrees Fahrenheit (200 degrees Celsius).
- If you got some leftover filling, you can store it up to 2 days in the refrigerator or up to 2 months in the freezer. Use an airtight container. Bake the filling with some oil in a frying pan so you get fried rice (delicious with some scrambled eggs).
- You can't store baked wraps, because the structure of the tortilla wraps changes when stored.

Ingredients
- 1⅔ cups white rice
- 1 pound broccoli
- 2 carrots
- 1 onion
- 1 tablespoon olive oil
- ½ pound ham cubed
- ⅛ teaspoon chili powder
- 6 tortilla wraps
- 2 oz. cheese grated, like Gouda

Instructions
- Preheat the oven to 390 degrees Fahrenheit (200 degrees Celsius).
- Line a baking plate with baking paper.
- Cook the rice until done.
- Mix in a bowl the onion, carrot, and broccoli with olive oil.
- Spread the vegetables on the baking plate.
- Put the baking plate into the oven and bake for 15 minutes. Stir once (halftime).
- Put the veggies in a bowl and mix them with the ham cubes, rice, and chili powder.
- Heat a tortilla wrap for 5 seconds in a dry frying pan (on medium heat) on both sides.
- Put the wrap in front of you and spread filling in the middle of the wrap.
- Roll the wrap and put it in the casserole dish.
- Repeat for all the wraps.
- Sprinkle the grated cheese on top of the casserole and bake for 15 minutes in the oven.
