Carpaccio Club Sandwich: Heavenly Taste Sensation Between Three Slices of Bread!
Do you know what is one of my favorite lunch recipes when I eat out? A Carpaccio Club Sandwich. I have already eaten quite a few because this is irresistibly delicious.
The tender carpaccio, crunchy cucumber, peppery arugula, salty old cheese, and pesto mayonnaise. And did I mention the semi-sun-dried tomatoes? Honestly, this is sandwich heaven.
Make it from scratch
And now the question was, can I create this delicious club sandwich at home? With the right flavor combinations. The answer is: it certainly succeeded.
I was going to start with one sandwich, for myself, as a guilty pleasure, but in the end, there were five plates on the table. And they were all empty. So, Mom, can you make another one? “Not right now, but if we want to have an extra tasty lunch again soon, I'll make it again!”.

What do you need for Carpaccio, Pesto, and Cheese Sandwich?
To prepare this Sandwich with Beef Carpaccio, you require the following ingredients. You can find the correct amounts in the recipe card at the bottom of the blog:
- Cornbread: bread with a light yellow color with a slightly sweet taste.
- Mayonnaise and Pesto: You get a tasteful sweet, light green mayonnaise by combining the green pesto with the creamy mayonnaise.
- Cucumber: has a fresh and neutral taste.
- Carpaccio: Thinly sliced raw beef tenderloin, the finest cut of beef.
- Aged cheese: or Old cheese, has a spicy and rich taste.
- Parmesan cheese: A salty taste from Italian cuisine.
- Pine Nuts: Use toasted pine nuts for a hint of nutty flavor.
- Sun-dried tomatoes: Full of flavor, slightly sweet and juicy.
- Arugula: For a peppery taste.
How to prepare a Carpaccio Club Sandwich

- Toast the cornbread. Mix the pesto with the mayonnaise. Place a slice before you and spread it with the pesto mayonnaise.
- Top the bread with slices of cucumber and a portion of old cheese on top.
- Place a second slice of toast on top. Spread the bread with pesto mayonnaise. Place slices of carpaccio on top. Sprinkle with pine nuts and Parmesan cheese.
- Divide arugula and (semi) sun-dried tomatoes on top. Place the third slice of cornbread on top.
You don't have to serve anything with this, but it is undoubtedly delicious with a bowl of tomato soup, a fresh salad, or homemade fries.
Tips, Substitutions, and Variations
- Carpaccio: Replace the carpaccio with roast beef, chicken breast, or smoked meat. All very tasty.
- Pesto mayonnaise: Instead of pesto mayonnaise, truffle mayonnaise is a good substitute.
- Italian: Add some slices of mozzarella and sprinkle with basil.
- Asian twist: Instead of pesto mayonnaise, use wasabi mayonnaise. Replace the arugula with thin strips of carrot and scallion. Sprinkle the carpaccio with a little soy sauce.

- 1 tablespoon green pesto
- 3 tablespoons mayonnaise
- 6 slices cornbread toasted
- ½ cucumber peeled and thinly sliced
- 2 slices aged cheese old cheese
- ¼ pound beef carpaccio
- 2 tablespoons pine nuts toasted
- 1 oz. Parmesan cheese shaved
- 10 sun-dried tomatoes sliced, or semi-sun-dried tomatoes
- 1 oz. arugula

Instructions
- Mix the pesto with the mayonnaise.1 tablespoon green pesto, 3 tablespoons mayonnaise
- Place a slice of cornbread before you and brush with a tablespoon of pesto mayonnaise.6 slices cornbread
- Top with thin slices of cucumber and a slice of aged cheese.½ cucumber, 2 slices aged cheese
- Place a second slice of cornbread on top and also brush with pesto mayonnaise
- Divide half of the carpaccio over the mayonnaise and sprinkle with pine nuts and Parmesan cheese.¼ pound beef carpaccio, 2 tablespoons pine nuts, 1 oz. Parmesan cheese
- Top with 5 semi-sun-dried tomatoes and divide the arugula on top.10 sun-dried tomatoes, 1 oz. arugula
- Finish the sandwich by placing the third slice of toasted cornbread on top.
- Halve the sandwich (diagonally) and make the second carpaccio club sandwich similarly. Tasty!
