White Chocolate and Strawberry Mousse

I combined a delicious strawberry and white chocolate mousse in a glass. And topped that elegant dessert with strawberry glaze. 

And I love a sweet dessert which everyone can eat. So I made it without raw eggs but with whipped cream and mascarpone. And to give it a great look - I made a strawberry jelly mirror. Like I did with the white chocolate cheesecake with cookies and forest fruits. I thought that was so beautiful. 

This strawberry dessert can be made a day in advance. And so I could serve it immediately after dinner. And it tasted so delicious! It was such a winner, and therefore I'm certainly going to prepare this more often!

What do you need for Strawberry and White Chocolate Mousse?

To prepare these White chocolate and strawberry mousse cups, you need the following ingredients. You can find the correct amounts in the recipe card at the bottom of the blog:

• Strawberry Sauce - A sweet dessert sauce. Use it for the strawberry mousse and glaze. You can make it yourself. I've got a great recipe for a homemade strawberry sauce. When used, make sure to purée the sauce and sieve it, or buy sauce in the supermarket.
• Gelatin - You can buy it as sheets or as gelatin powder. Start by softening the gelatin in the water, And then you've got to dissolve it in a hot liquid. It doesn't matter for the result which sort of gelatin you use.
• Lemon juice - to give a fruity flavor to the strawberry. Mousse
• Cream - Use heavy cream, which you can whip. This makes the mousse airy.
• Mascarpone - a soft and rich cheese that makes the mousse very creamy.
• White chocolate - This is used for the white chocolate mousse. It's sweet and buttery. Use a good quality, hence it contains too much fat.
• Vanilla extract - gives a touch of vanilla flavor to the white chocolate mousse.

How do you prepare strawberry white chocolate mousse cups?

1. Soak the gelatin. Heat the strawberry sauce until hot. Turn off the heat and add the gelatin and lemon juice. Whisk until the gelatin is dissolved. Allow cooling for 10 minutes.
2. Mix the cream, mascarpone, and sugar until yogurt thickness. Add the cooled strawberry jelly.
3. Mix everything. Fill cups about half with the strawberry mousse. Let stiffen for 2 hours in the refrigerator.
4. Melt the white chocolate au bain-Marie. Let the chocolate melt until it's lukewarm.
5. Mix cream, mascarpone, and vanilla extract until it's got the thickness of yogurt. Add the cooled chocolate and whisk through the cream mixture. 
6. Whisk and divide the white chocolate mousse on top of the strawberry mousse. Let it stiffen for at least 2 hours in the refrigerator.
7. Heat the strawberry sauce and turn off the heat. Add the soaked and squeezed gelatin to the sauce. Let it cool for 15 minutes. 
8. Pour the sauce gently on the mousse and return it to the refrigerator. Let it stiffen for at least 2 hours.
