Raspberry Waffles with Mascarpone
Homemade waffles always bring back childhood memories. We used to have them on Easter or Christmas, and the smell of freshly baked waffles made us so excited. We could hardly wait for them to be ready! Even now, my kids love it when we make fresh waffles at home.
Today, I'm sharing a recipe that makes waffles even better. This version is served with fresh raspberries and a spoonful of creamy mascarpone—it adds a slightly tangy twist that pairs perfectly with the sweet, crispy waffles. You can dust them with confectioner's sugar for some extra flavor.

Ingredients
- 1 egg, size L
- ¼ cup all-purpose flour
- ⅛ teaspoon salt
- 2 tablespoons sugar
- 2 tablespoons butter
- ¼ cup milk
- 3 tablespoons Raspberries, fresh
- 1 tablespoon mascarpone
- confectioners sugar

Instructions
- Heat the waffle maker and grease it with oil or cooking spray.
- Separate the egg yolk and egg white.1 egg
- To make the batter, mix the egg yolk, flour, salt, and sugar in a bowl until smooth and pale yellow.¼ cup all-purpose flour, ⅛ teaspoon salt, 2 tablespoons sugar
- Melt the butter and stir it into the batter.2 tablespoons butter
- Stir well with a whisk.
- Add the milk while stirring until smooth.¼ cup milk
- Beat the egg white in a clean bowl until stiff peaks form.
- Gently fold half the egg white into the flour mixture with a spatula, then carefully mix in the rest.
- Pour the batter into the waffle maker and bake until golden brown.
Serve
