This Boursin Mashed Potato and Beef Casserole is my favorite comfort food when I'm in the mood for a casserole full of flavor. It's the perfect combination of tender green beans, spicy ground beef, and creamy mashed potatoes flavored with Boursin. And the best part? The whole family loves it!
Creamy Boursin Mashed Potato Bake with Beef
Cooking with children can be difficult at times. It is always a search for something that everyone likes. But every now and then, you make a dish that everyone likes. And this is such a recipe!
What makes this recipe special is the Boursin in the mashed potatoes. It gives a creamy taste that perfectly matches the hearty ground beef and green beans. And, of course, a crispy layer of breadcrumbs on top. That reminds me of the past when we often ate casseroles with breadcrumbs. This recipe is ideal for a cold day; you slide it in the oven, and after 20 minutes, you can enjoy it. It's exactly what you need after a busy day.
This casserole has everything you need without spending a long time in the kitchen. It's really something for those who like simple and tasty!
Ingredients
- Potatoes: Use a floury variety such as Russet, Yukon, Doré, King Edward, and Maris Piper. These are perfect for a soft, creamy purée.
- Vegetable stock: Adds extra flavor during cooking. You can use a stock cube or make your own vegetable stock.
- Boursin: Makes the mashed potatoes nice and creamy. No Boursin at home? Soft cream cheese with herbs will do.
- Milk: Makes the purée smooth. Whole milk adds extra creaminess, but semi-skimmed milk will also work.
- Salt: For flavor. If you use salted stock, add a little less salt.
- Shallots: They have a soft, sweet onion flavor that goes well with the minced meat. Red or regular onion will also work.
- Ground beef: You can also use half-and-half minced meat or minced chicken.
- Green beans: For a nice bite. Fresh beans are tasty, but frozen beans work just as well.
- Red pesto: For a spicy flavor. Green pesto is also possible, but that gives a different taste.
- Breadcrumbs: For a crispy crust. No breadcrumbs at home? Use crumbled rusks or panko.
Preparation
- Boil the peeled potatoes in stock until cooked. Drain and mash with a potato masher.
- Add the Boursin and milk and mix until creamy. Season with salt.
- Heat oil in a pan and fry the shallots until translucent. Add the minced beef and fry until crumbly. Add the green beans and red pesto and stir everything well. Spoon the mixture into the bottom of an oven dish.
- Distribute the mashed potatoes over the ground beef and smooth the top. Sprinkle breadcrumbs over the mash and bake the dish for 20 minutes at 390 °F (200 °C). Serve immediately.

For the mashed potatoes
- 2 pounds potatoes
- 4 cups vegetable stock
- ½ cup boursin
- ⅔ cup milk
- 1 teaspoon salt
For the casserole
- 2 tablespoons sunflower oil
- 2 shallots finely chopped
- ⅔ pound ground beef
- 1 pound green beans fresh or frozen
- ¼ cup red pesto
- 3 tablespoons breadcrumbs

- Preheat the oven to 430 °F or 400 °F
Mashed potatoes
- Peel the potatoes and cut them into equal pieces.2 pounds potatoes
- Boil the potatoes in a pan with the vegetable stock for about 20 minutes until done. Prick the potatoes with a fork to check if they are done.4 cups vegetable stock
- Drain the potatoes and mash them.
- Mix the Boursin and milk through the potatoes until you have a creamy purée. Add salt to taste.½ cup boursin, ⅔ cup milk, 1 teaspoon salt
Casserole
- Heat the sunflower oil in a frying pan and fry the onions for about 3 minutes until translucent.2 tablespoons sunflower oil, 2 shallots
- Add the ground beef and fry until brown.⅔ pound ground beef
- Add the green beans to the minced beef and stir in the red pesto. Mix everything well.1 pound green beans, ¼ cup red pesto
- Spoon the ground beef mixture into an oven dish.
- Spread the mashed potatoes evenly over the ground beef mixture.
- Sprinkle the breadcrumbs over the mash for a crispy crust.3 tablespoons breadcrumbs
- Place the oven dish in the oven for 20 minutes, until the top is golden brown.
Serve
- Remove the oven dish from the oven and serve. Enjoy!
Notes
- Refrigerator: Store the casserole covered in the fridge for up to 2 days.
- Freezer: Wrap the dish in two layers of plastic wrap and store it in the freezer. Let it defrost in the refrigerator. Tip: Make the casserole per person using small casserole dishes.
- Reheat: Cover the casserole dish with aluminum foil and heat it in the oven at 350 °F (180 °C) until it is nice and hot.
