One of the easiest and most delicious warm appetizers I make: Bacon-wrapped with goat cheese stuffed apricots. Creamy, sweet, and salty: It’s a great snack. And because you can prepare it in advance and just have to pop it in the oven for 5 minutes when you’re having a party it’s a great recipe to write down in your book!
I always love to entertain and what’s a gathering without appetizers and snacks? But they’ve got to be delicious, easy to prepare and the prepping has to be done in advance. Because you want to enjoy yourself with your guest!
And that’s when this great finger food recipe was made. A warm snack that you’ll only have to bake in the oven for 5 minutes and you can serve right away.
The salty bacon, combined with the sweet apricot and silky creamy goat cheese is such a terrific food combo. This appetizer has proven itself many times at many parties.

Ingredients for baked goat cheese filled apricots with bacon

- Apricot - Use dried apricots and soak them in water before use. That way they won’t burn when baked in the oven. You can also replace it with dried figs or dried plums.
- Goat cheese - Use soft goat cheese, because it makes it that much easier to fill them.
- Bacon - Take a slice of bacon and halve it. Wrap that around the apricot. You could also use Parma ham or any other salted dried ham for this.

- Start by soaking the apricots for 10 minutes in hot water. Drain them and pat them dry.
- In the meanwhile slice the goat cheese in small cubes. It doesn’t have to be neat. But it’s easier to handle it this way.
- Cut a whole in the side of your apricot so you’ll get a small envelope. Fill that with goat cheese.
- Take the bacon and wrap it around the apricot. Put in a casserole dish. Bake that for 5 minutes at 390 °F or 200 °C in the preheated oven. If you don’t use them right away, cover them with foil and store in the refrigerator until you’re ready to bake.

Instructions
- Preheat the oven to 390 °F / 200 °C.
- Boil water and take off the heat.
- Put the apricots in the water for 10 minutes and get them out with a slotted spoon.
- Cool them slightly.
- With a sharp knife make a cut in the apricot (not through and through only about ¾ deep).
- Fill it with a small cube of goat cheese.
- Cut the bacon in half and wrap the apricot.
- Put the apricot in a baking dish.
- Put the baking dish in the oven for 5 minutes and eat while they are still warm.
