Classic nachos are great for sharing… until the top gets all the toppings and the bottom turns soggy.
A casserole fixes that. You get layers: crunchy crumbs underneath, creamy beef filling in the middle, and a cheesy nacho top that turns golden in the oven. It's neat enough to serve with a spoon, but still feels like proper comfort food.

Layered Beef Nacho Bake With Cheese
Nacho casserole is one of those dinners that feels like a party even on a regular weekday. You put a warm bubbling dish on the table, everyone suddenly appears on time, and nobody asks "what's for dinner?" anymore-because they can see it. 😄
I already had a couple of nacho casseroles on the blog, a chicken nacho casserole and a beef nacho casserole with veggies and cheese, but I wanted a new version. This one has ground beef, sour cream, lots of cheese, and a homemade salsa you can put together in 5 minutes. Minimal effort, maximum "good taste!" energy.
One thing matters here (at least, it did at our table): the nachos need flavor. So don't grab the plainest chips you can find-choose something with a punch, like cheese-flavored nachos. That way every bite tastes like something, not like "crispy air."

- Tomatoes: This is your salsa base. Diced tomatoes keep it fast and juicy.
- Garlic and red chili: Garlic brings depth; chili brings the kick. Want it mild? Use less chili (or remove seeds).
- Smoked paprika and cumin: These give that warm "Tex-Mex" flavor.
- Sugar and salt: Tiny amounts, big difference. Sugar rounds out acidity; salt improves everything's flavor.
- Flat parsley (or coriander/cilantro): Parsley keeps it friendly. Coriander makes it more "taco night." Select your team.
- Ground beef: Perfect for soaking up the salsa and spices.
- Onion: The flavor base. Don't skip-this is where the "mmm" starts.
- Taco seasoning: Quick seasoning shortcut. I always use my homemade taco seasoning.
- Beef stock: Makes the filling saucy and scoopable (not dry). This homemade beef stock recipe is perfect.
- Sour cream: Creamy, slightly tangy, and it ties the whole dish together.
- Grated cheese: For that golden top and the "I'm definitely having seconds" moment. Use Gouda, Cheddar or another great melting cheese.
- Nachos: Choose a flavorful kind (cheese nachos are especially good). You use some crushed for the base and whole chips for the top crunch.
How to Make It

- Add everything for the salsa to a food processor and pulse until it's your preferred texture.
- Sauté onion in oil, add garlic and ground beef, cook until browned. Stir in taco seasoning and the homemade salsa, then simmer briefly. Take off the heat and mix in sour cream, broth, and half the cheese.
- Crumble a handful of nachos into the baking dish, add the beef mixture, top with whole nachos, sprinkle with remaining cheese.
- Bake until hot and bubbly. If the nachos brown too quickly, cover with foil halfway through. Serve right away.
Top Tips
- Make-ahead win: Make the filling a day ahead and keep it in the fridge. Assemble and bake the next day. Important: Don't add the nachos early-you want them crunchy.
- Pick bold nachos: Cheese-flavored nachos make the whole dish taste better.
- Choose your salsa texture: pulse a few times for chunky, longer for smoother. (Both are good. No wrong answers.)
- Foil is not failure: If the top gets too brown, foil on top keeps it perfect.
Serving suggestions
- This is great with rice and a green salad (it balances the richness), and extra sour cream and tomatoes on the side.
- If you're serving a crowd, put the casserole in the middle and add bowls of toppings so everyone can build their perfect plate.

- ½ oz. flat parsley, or coriander/cilantro
Nacho casserole
- 1 tablespoon sunflower oil
- 1 onion, finely chopped
- 1 clove garlic, squeezed
- ⅔ pounds ground beef
- 2 teaspoons Taco seasoning
- 2¼ cup beef stock
- ½ cup sour cream
- 1 cup grated cheese, Gouda or Cheddar
- 7 oz. nachos, cheese flavour is very tasty

Instructions
Salsa

Nacho casserole
- Preheat the oven to 350 ℉.
- Heat oil and fry onion for 2 minutes. Add garlic and ground beef; cook until browned.1 tablespoon sunflower oil, 1 onion, 1 clove garlic, ⅔ pounds ground beef
- Add taco seasoning and homemade salsa. Simmer for 5 minutes.2 teaspoons Taco seasoning
- Transfer to a bowl and mix in sour cream, broth, and half the cheese.2¼ cup beef stock, ½ cup sour cream, 1 cup grated cheese
- Crumble a handful of nachos and cover the bottom of the baking dish with crumbs.7 oz. nachos
- Spread the beef mixture over the crumbs. Top with nachos and sprinkle with remaining cheese.
- Bake for 45 minutes. Check halfway; if the nachos brown too quickly, cover with foil.
- Serve immediately (great with rice, green salad, sour cream and tomatoes).
Notes
- Refrigerator: Store leftovers covered in the fridge.
- Reheat in the oven if you want the top to stay as crisp as possible. (The microwave works too, but the nachos will soften-still tasty, just a different vibe.)
