Greek burgers with Feta. A delicious moist beef burger served in a crispy Pita bread. With Mediterranean grilled vegetables and flavored with Za'atar and delicious Feta cheese and hummus. Delicious on the BBQ or Grill. And a very simple recipe that's ready in just 20 minutes.
The easy Monday recipe today: a healthy meal that can be ready in just 20 minutes. This time I opted for a burger with grilled vegetables and white cheese. And with hummus to complement the Feta cheese flavor.
When serving this recipe you can opt for a green salad. Really delicious and healthy.
- Fennel: Fennel has a slight anise flavor and becomes crispy when you grill it. If you don't like fennel you can use eggplant or red pepper.
- Zucchini: Although a zucchini on its own doesn't have a lot of flavors when grilling it becomes very tasty.
- Hamburgers: In this recipe for Greek burgers with feta I used beef hamburgers. Because they're very juicy. But you can also substitute it with turkey, chicken, or pork hamburgers.
- Pita bread: instead of a hamburger bun I've chosen Pita bread for an extra Greek touch. And the great advantage of pita bread is that you can fill it. Take the largest pita bread you can use because you can fill it better.
- Hummus: a creamy topping for these hamburgers. Make the hummus easily with this Homemade hummus recipe or sweet potato hummus recipe. And you can also use store-bought.
- Feta cheese: Feta is a Greek slightly salt sheep cheese that you can easily cut into cubes. Only cheese that is prepared in a traditional way in some parts of Greece is called Feta (source: Wikipedia).
- Za'atar: A spice mix from the Middle East. It contains oregano and thyme. It's a bit spicy and gots a nutty, roasted flavor. And it's a great addition to this Greek burger. If you don't have Za'atar then you could also use Sumac oregano or thyme.
🔪 How to prepare Greek burgers with Feta
Step 1: Slice your vegetables. Clean the fennel and zucchini. Cut the fennel into small slices. Then take a vegetable peeler or cheese slicer and slice your zucchini. In a bowl mix sunflower oil, salt, and pepper. Mix the vegetables.
Step 2: Grill the burger, bread, and veggies. Heat a grill pan or BBQ until it's very hot. First bake the hamburgers, 3 minutes on both sides. Wrap your hamburger into aluminum foil. Grill the pita breads for 2 minutes on both sides. Then grill the zucchini slices for 1 minute and the fennel for 2 minutes on both sides. Set aside, because you're going to prepare the burgers!
Step 3 Fill your pita bread. Slice your pita bread so it gets a hole and fill that with grilled vegetables. Take the hamburger from the foil and put it in the pita bread.
Step 4 Flavor your burger. Top with a spoonful of hummus. Crumble feta on top and sprinkle that with Za'atar. Serve immediately.

- By pre-oiling the vegetables, they won't burn in the grill pan. You can't oil the grill pan so do it the other way around.
- If you don't have feta cheese at home, you can also use white cheese.
- The recipe for a Greek burger with feta can, of course, also be made on the barbecue.
- When you bake the hamburger according to the recipe (3 minutes on both sides) it will be medium-rare. If you want your hamburger fully done, grill for 5 minutes on both sides.
How do you store leftover Feta cheese?
I don't like throwing away leftovers. But sometimes ingredients might seem a little bit difficult and you're not sure what to do with leftovers. Like with Feta cheese. I've got some great tips for you!
- Take an airtight container. Slice the cheese into cubes and put the liquid salt solution from the jar into the container. Add the cheese. This way you can store it for up to one week in the refrigerator.
- If you don't have a salt solution. Then put some olive oil in the container and slice the cheese into cubes. Put them into the olive oil (and make sure the cubes are below oil level). This way it stays good for up to two weeks in the refrigerator.

Preparation
- Wash the fennel and zucchini.
- Cut the fennel into thin slices.
- Shave your zucchini with a peeler into thin strips.
- Mix the sunflower oil with salt and pepper.
- Add the fennel and zucchini and stir well.
Grill
- Heat the grill pan over high heat and fry the burgers first, 3 minutes on each side. Pack them in aluminum foil and let them rest for a while.
- Grill the pita bread on both sides for 2 minutes and cut them open so you get a sack.
- Grill the fennel and zucchini. The zucchini grill you 1 minute, the fennel 2 minutes on both sides.
Prepare your Greek burgers with Feta
- Divide the vegetables into the opening of the pita bread.
- Get the hamburger from the foil and put them on top of the veggies.
- Top with a tablespoon of hummus and sprinkle a little za'atar and white cheese on top.
- Serve with a delicious salad.
