High teas are becoming increasingly popular in the Netherlands. And very understandable because it is wonderful to relax and enjoy with a nice cup of tea and tasty snacks. Such as sandwiches.
Of course, you can opt for a sandwich filled with ham and cheese. But yes, I can eat that every day for lunch. A High tea sandwich is just so much more fun when it's special. And so this time 4 different high tea sandwiches. In different forms and of course with different fillings.
4 sandwiches to impress
I opted for four different types of sandwiches. All savory and one filled with meat, a chicken variant, a variant with fish and a vegetarian sandwich.
For the meat variant I made a combination with smoked ham, nice salty, spicy cheese and asparagus. The chicken sandwich is combined with the nutty taste of walnuts, sweet raisins and seasoned with thyme. For me, smoked salmon is inextricably linked to a high tea sandwich, so I made a sandwich with smoked salmon and watercress. Delicious. Of course the vegetarian version was also a must and so I opted for a radish sandwich, creamy with cream cheese and nice and spicy with herbs. A merry party on a piece of rye bread.

As you are used to from me, I don't just shoot out of the blue, but I try to make a complete entertaining menu. So this time all recipes will become a luxury high tea. Preparation
1 day in advance:
- prepare the asparagus roll ups and keep them in the fridge.
- make the filling for the chicken sandwich, smoked salmon sandwich and radish sandwich. Put the chicken filling in a piping bag with a large nozzle. Store all three fillings in the refrigerator.
2 hours before the high tea:
- Toast the raisin bread
- Make the smoked salmon and radish sandwiches. Store in the refrigerator until use.
- Also make the chicken sandwich. Keep cool.
