A bite of these delicious mustard soy chicken skewers and you can't stay away from them. They are so full of flavor. The chicken is marinated in orange juice, mustard and soy sauce marinade. The marinade make the meat tender and soft. And of course a great flavor. A succes recipe for a summer BBQ or dinner party, these skewers will be a hit for sure.
But I don't serve this skewers only in summer times, but often in Winter too. And then I bake them in my grill pan. That way they stay tender and moist. And in winter I serve them with white rice and a crispy green salad. A skinny dinner which I can make fairly easy.

Why should you grill these skewers?

- Chicken is a skinny kind of meat and really tender.
- You can use chicken in almost every dish. You don't have to marinade for a long time and so you can put it on the grill really quick.
- This recipe for mustard soy chicken skewers can be prepared in summer (on the BBQ) or in winter (grilled in a grillpan). A year round recipe.
How do you check if your chicken is done?
It's always tricky to see if your chicken is done when grilling. And no one wants to get food poisoning. Luckily there are two easy ways to check;
- Use a meat thermometer, when you measure you know it for sure. When the core temperature in the thickness part of your chicken is 165 degrees Fahrenheit (75 degrees Celsius), you're chicken is safe to eat.
- If you don't have a thermometer, halve a piece of chicken and press slightly. If the juices are clear the chicken is done.
Sometimes it's said that when the chicken meat is white, the chicken is done. That's right, but unfortunately chicken meat is not only perfectly white. It can look slightly pink even when it's done. Therefor use one of these methods.
Ingredients necessary for these tender chicken skewers
You need these ingredients to prepare these mustard soy chicken skewers.
- Orange, the sour of the orange makes sure the meat will become tender. You can also substitute it with lemon, wine or lime.
- Soy sauce, use a sweet soy sauce lik Kecap Manis or Kecap Medja
- Sesame oil, sunflower oil, mustard, garlic and sesame seeds: needed as flavoring for the marinade.
- Ginger: use fresh ginger for a subtle flavor. If you don't have that in your cupboard you can use 1 teaspoon ground ginger instead.
- Chicken breast: the meat I used in this recipe. Marinate it for 30 minutes. You can also substitute it for Pork tenderloin. In that case extend the marinating time with an hour.
How do you prepare mustard soy chicken skewers?
Step 1: Prepare the marinade by whisking the orange juice, sweet soy sauce, sesame oil, sunflower oil, mustard, ginger and garlic in a bowl.
Step 2: Cut the chicken breast in 1 x 1 inch cubes and mix them together with the sesame seeds through the marinade. Cover with plastic foil and let it marinade for 30 minutes in the refrigerator.
Step 3: Put the chicken cubes on the skewers. If you use wooden satay prickers, soak them for an hour in water (otherwise the wood will burn when grilled). Put everything on a plate, cover with plastic foil and refrigerate until use.
Step 4: Grill the mustard soy chicken skewers for 4 minutes on both sides until they're done. You can grill them in a grill pan or on the BBQ. Serve immediately.
Variations and substitutions
These mustard soy chicken skewers are so good, but sometimes you want to use another ingredient or you're missing something in your pantry. Hereby some substitutions which are great:
- Substitute chicken breast with pork tender loin. Adjust the marinade time with 1 extra hour.
- The orange is slightly sour and makes sure your meat will become tender after it's grilled. You can also use lemon juice, wine or lime juice instead.
- If you don't have fresh ginger, use 1 teaspoon ground ginger.
- Sesame seeds and sesame oil can be left our without a problem.
- Slice the chicken breast in cubes of the same size. That way you make sure that the meat on the skewers is done at the same time.
- If you use wooden skewers, soak them in water for 1 hour. Otherwise they will burn when the mustard soy chicken skewers are grilled.
- You can marinate these skewers within 30 minutes, but you can also start marinating the day before.
- Preheat your BBQ or grill pan until it's very hot. That way the chicken won't stick to your grill and you can turn them around quite easy.
Preparation and storing
- You can prepare the marinate and add the chicken cubes one day in advance.
- The chicken can be stored, in an airtight container up to 2 days in the refrigerator when they're not grilled. After grilling you can store them in an airtight container for 3 days.
- You can also freeze the skewers. Put them in an airtight container and freeze them up to two months (raw or done).

- Do you use wooden satay skewers? Soak the skewers in water for an hour (so they won't burn when grilled).
- Grate the ginger and garlic.
Mustard soy chicken skewers
- In a bowl mix the orange juice, soy sauce, sesame oil, sunflower oil, ginger and garlic and mustard until well blended.
- Cut the chicken into 1 x 1 inch cubes and mix them with the marinade. Cover the bowl with plastic foil and store in the refrigerator.
- After 30 minutes marinating, you put the chicken on the satay sticks.
- Heat the BBQ or grill pan until it is piping hot (that way the chicken does not stick to the grill pan).
- Grill the chicken on both sides, about 4 minutes or until done.
