Homemade Dutch Advocaat
Back in the day, when I was young, and my grandma was throwing a party, little glasses came out of her cupboard. She poured a splash of Advocaat into them and then topped them off with whipped cream. To spoon the Advocaat out of the glasses, tiny mini spoons were served (and they were beautifully decorated).
All those elderly ladies enjoyed their 'advocaatje', that delicious, real Dutch liqueur. And when I got a little older, I also got my own glass. Delicious. The rich, velvety texture is wonderfully sweet. It became my favorite holiday drink.
Made from egg yolks, sugar, and brandy with a hint of vanilla, it becomes a creamy liqueur. But did you know that you can also make it yourself very quickly? And that turns out to be even more delicious. I can recommend it!
What do you need for Homemade Advocaat Egg Liqueur?
You require the following ingredients to prepare this Advocaat (Dutch Eggnog). You can find the correct amounts in the recipe card at the bottom of the blog:

- Brandy: is a type of spirit made by distilling wine, and it is often used as a key ingredient in Advocaat, the traditional Dutch eggnog liqueur. Brandy has a rich, deep flavor with notes of fruit, vanilla, and oak, and it can range in color from clear to amber, depending on the aging process.
- Egg yolks: Give the eggnog its creamy texture.
- Sugar: For the sweet taste.
- Salt: Balances the sweet taste.
- Vanilla Extract: For a hint of vanilla flavor. If you can get it, use natural vanilla extract, which has a slightly deeper flavor than artificial vanilla extract. With this recipe, you can make a homemade vanilla extract (and, if you bake a lot, it is highly recommended because you can use this for a reasonable amount of time).
How to prepare Homemade Dutch Advocaat Liqueur

- Place the egg yolks, sugar, salt, and vanilla extract in a bowl.
- Stir so that it is mixed.
- Bring a pan with a small layer of water to a boil. Hang the bowl above (the bottom must not touch the water, which is called Au Bain-Marie heating). Add the brandy and keep stirring as you deplete). Continue until you reach a temperature of 144 °F (ca. 62 °C) as measured by a thermometer.
- Remove the bowl from the pan and place it in an ice water bath. Keep stirring until the eggnog is about 100 °F (ca. 38 °C). Then pour it into a jar and put it in the fridge to cool down further.
Serve the eggnog with a dessert of whipped cream and a spoon. Mmmm. Also delicious in the No Bake Eggnog Cheesecake or the Tiramisu with Advocaat or just over a scoop of ice cream.
Tips, Substitutions, and Variations
- Stir: The description says to stir and not to beat the Advocaat. This is important. By stirring, the eggnog mixes the ingredients well. But if you beat it, it will become frothy, and the eggnog will remain thin.
- Brandy can also be replaced with vodka or rum.
- Vanilla extract: You can also use a vanilla pod. Cut it in half and scrape out the seeds with the back of a spoon. Add the seeds to the egg yolks. (Tip: place the intermediate stick in a container with sugar and stir it occasionally. This way, you get homemade vanilla sugar).
- Even more flavor: add a pinch of cinnamon and nutmeg to the eggnog for a truly wintery twist.
- Egg whites: Make delicious meringues with the leftover egg whites, such as these strawberry meringues or winter meringues.
- If there are layers after cooling, you can stir them together again.
- Because raw eggs and alcohol are used in advocaat, this drink is not suitable for pregnant women, children, the sick, or the elderly with poor health.

Ingredients
- Handful ice cubes

- ¾ cup sugar
- ⅛ teaspoon salt
- 2 teaspoons vanilla extract
- ¾ cup brandy

Instructions
- Prepare a water bowl and add some ice cubes to cool the water.Handful ice cubes
- Grab a large heatproof bowl and put the egg yolks, sugar, salt, and vanilla extract in the bowl.10 egg yolks, ¾ cup sugar, ⅛ teaspoon salt, 2 teaspoons vanilla extract
- Stir gently until mixed.
- Bring a pan with a small layer of water to a boil and hang the bowl with the egg yolk mixture above it. Stir, and meanwhile, pour in the brandy.¾ cup brandy
- Place the thermometer in the bowl and stir until the liquid reaches 144 °F (62 °C). Remove the bowl from the pan and place it in the ice bath.
- Keep stirring and allow cooling to about 100 °F (37 °C). Now pour into a jar or carafe and leave to cool in the refrigerator.
Notes
- If you can get it, use natural vanilla extract, which has a slightly deeper flavor than artificial vanilla extract. With this recipe, you can make a homemade vanilla extract.
- You can also use a vanilla pod. Cut it in half and scrape out the seeds with the back of a spoon. Add the seeds to the egg yolks. (Tip: place the remaining stick in a container with sugar and stir it occasionally. This way, you get homemade vanilla sugar).
- Eggnog contains raw eggs and only about 14% alcohol. Therefore, it is important to store it only for a short time.
- If you are going to store it, make sure that your bottle or jar is appropriately sterilized. You can now keep the Advocaat for several weeks in the refrigerator.
- If there are layers after cooling, you can stir them together again.
